How To make Easy Frosty Pumpkin Pie
CRUST 1/4 c Margarine
1 1/2 c Crushed ginersnap cookies
============================================================================
FILLING 1 cn Pumpkin (16 oz.)
1 pn Vanilla ice cream softened
2 cups
1 c Powdered sugar
1 1/2 t Pumpkin pie spice
1/8 t Salt
1 t Vanilla
2 c Frozen whipped topping,
Thawed Directions
CRUST; Melt margarine in small sauce pan. Remove from heat; stir in crushed cookies. Press mixture evenly in bottom and up sides of a 9 inch pie pan; refrigerate. FILLING; In Large bowl combine all filling ingredients except whipped topping; blend until smooth. Fold whipped topping into pumpkin mixture. Pour into pie crust lined pan. Freeze for several hours or until firm. (For longer storage, cover tightly with foil) Before serving let stand at room temperature at least 15 minutes. How to Make Pumpkin Pie - Easy Recipe - Pumpkin pie is a very easy pie to make. It is a delicious tradition that you and your family will enjoy.
This is my mom's version of the Libby pie recipe. My mom taught me how to make pumpkin pie when I was a kid and I still make it her way. My family likes pumpkin pie above all other pies and I believe it's because of this special recipe.
Ingredients:
15 ounce can - Whole pumpkin
12 ounce can - Evaporated milk
2 - Eggs
3/4 cup - Packed brown sugar
1/2 teaspoon - Salt
1 teaspoon - Cinnamon
1/2 teaspoon - Ginger
1/4 teaspoon - Nutmeg
1/4 teaspoon - Cloves
Unbaked 9 inch pie shell

When the recipe calls for only 3/4 of a can of pumpkin, you can easily but the rest in a freezer bag or in container and stick it in the freezer!
Want to use fresh pumpkin?
Fresh pumpkin and canned pumpkin work a little differently.
Fifteen ounces of canned pumpkin is just shy of 2 cups (16 ounces would be 2 cups).
A 3-pound pumpkin (meant for pie) will likely give you enough puree for your recipe.
Here are some good tips for using fresh pumpkin: Pumpkin math: After cooking and draining, this is about what to expect from a typical cooking pumpkin.
2-1/2 pound pie pumpkin = 1 3/4 cups puree 3 1/2 pound pie pumpkin = 2 1/2 cups puree 6 pound carving pumpkin = 2 3/4 cups puree 5 pound round pumpkin = 3 1/3 cups puree.
