Salata de vinete cu tahini/Aubergine au tahini/ Eggplant with tahini
Este o varianta a tradiționalei salate de vinete, necomplicata, care te va surprinde cu aromele ei.
Pana isi ispasesc vinetele pacatele in cuptor, poti sa prepari sosul de tahini pe care il poti imbogati cu patrunjel verde si lamaie.
Se pregateste rapid, la fel dispare si din farfurie!

❂ Ingredients
For Eggplant w Tahini:
2 Medium Eggplants
⅓ Cup Tahini paste
¼ Cup Water
2 Tsp Pomegranate Molasses
1 Tbsp Lemon juice
2 Garlic Clove
3 Tbsp chopped Parsley
Salt/Pepper to taste
Seeds from ½ large Pomegranate
Olive Oil to finish
For Vegan Naan:
160ml warm Water (100-110ºF)
2 Tsp Sugar
1 1/2 Tsp Yeast
2 Cups (250g.)All-purpose Flour
1/2 Tsp Salt
1/4 Tsp Baking Powder
1 Tbsp Avocado Oil plus more to oil your hands
2-3 Tbsp Finely Chopped Parsley
❂ Cooking process:
⁃ First, burn the eggplant, around 20 min on the grill.
⁃ Leave to drain for at least 30 minutes.
⁃ Chop the eggplant flesh roughly and transfer to a medium mixing bowl.
⁃ Add the tahini, water, pomegranate molasses, lemon juice, garlic, parsley and some salt and pepper; mix well
⁃ To serve, spread over a shallow dish, scatter the pomegranate seeds on top and drizzle with oil.
Naan Cooking Process:
⁃ Stir the sugar in the warm water (100-110ºF)until dissolved. Add in the active dry yeast and whisk to dissolve. Set aside for 15 minutes.
⁃ Stir together: all-purpose flour, sea salt, and baking powder.
⁃ Once the yeast mixture has activated, pour it into the flour mix and add 1 tbsp of neutral-flavored oil.
⁃ Mix the ingredients.
⁃ Cover the dough with a clean dish towel and set aside for at least 90 minutes.
⁃ After resting cut the dough into 8 pieces.
⁃ Allow to rest for 10 minutes.
⁃ Roll the dough into a thin oval shape.
⁃ Sprinkle the naan with a couple sprinkles of chopped cilantro. Dampen your fingers in some water and carefully pick up the naan. Flip it onto its backside and pat a bit of water all over the backside.
⁃ Flip the naan and cover the pan to steam the naan for 30 to 40 seconds. Done.
⁃ Brush the hot naan with melted vegan garlic butter and sprinkle with salt.
