Great Northern Bean & Ham Soup
1 ln Great Northern Beans - rinse & soak overnight
1 lb Smoked Ham or 1 Ham Hock
1 Tbsp Olive Oil
1 Large Onion - diced
3 Ribs Celery - chopped
3 Carrots - chopped
1 Tbsp Brown Sugar
1 tsp Thyme
1 Bay Leaf
4 C Chicken Broth
4 C Water
1 Tbsp Fresh Parsley - chopped
Salt & Pepper to taste
Rinse beans and place in a medium sized bowl. Cover with water and soak overnight.
Drain beans.
In a large dutch oven heat oil, add onions & celery. Cook a few nminutes then add the carrots. Cook untuil onions start to
turn translucent, approx 5 - 7 minutes. Add pepper to taste & thyme. It's best not to add the salt until after the beans have cooked, it
can effect the texture of the beans.
Add brown sugaar into mixture stirring well. Add ham, chicken broth, water & bay leaf Add beans and cover with lid.
Cook on a low simmer for 2 - 2 1/2 hours. Top with fresh parsley.

I added two pieces of smoked neck bones, diced ham, carrots, celery, onions and diced tomatoes, and i seasoned it well with rubbed sage, dried thyme and dried Rosemary to make it an all time favorite. 1 Tbsp Tomato Paste
1/2 tsp. ground Cumin

1 diced tomato
2 Bay leaves
8 C. water
Chopped fresh parsley (for garnish)

Homemade Lentil Soup Recipe
This delicious Lentil soup recipe is jam-packed with spices and caramelized vegetables to bring about an incredibly flavorful soup. This is one of the easiest-to-make most nutritious soups on my website and the taste is beyond amazing.
Lentils are a legume that is indigenous to the Mediterranean and Middle Eastern Countries. They are seeds of a plant that are jam packed with fiber, potassium and protein and make for a great meat replacement.
Since lentils are starchy, earthy in flavor, and can be on the bland side, there are many ways to make them flavorful including by adding them into soup. When other ingredients are introduced that compliment lentils like onions, garlic, spices, and lemon, the taste is out of this world.
There are many variations of lentil soup depending on where you live so do not be surprised if you see different ingredients in it. My version is much more of a Middle Eastern Lebanese style.

Ingredients for this recipe:
• 2 tablespoons olive oil, ghee, or clarified butter
• 2 peeled and medium diced yellow onions
• 2 peeled and medium diced carrots
• 2 peeled and medium diced ribs of celery
• 3 finely minced cloves of garlic
• 1 ½ teaspoons ground cumin
• 1 teaspoon ground coriander
• 3 cups green lentils, rinsed
• 1 large peeled and medium diced potato
• 2 bay leaves
• 9 cups chicken stock
• juice of 1 lemon
• salt and pepper to taste

Bean Soup Tuscan Style
BEAN SOUP TUSCAN-STYLE
2 T. extra virgin olive oil
1 c. onion, chopped
1/3 c. carrots, chopped
2 ribs celery, chopped
2 cloves garlic, minced
1 medium tomato, chopped
1 quart of chicken broth
2 cups water
2 (15 oz.) cans white beans (Great Northern, navy, or cannellini)
2 dry bay leaves
1 tsp dried oregano
4 cups finely chopped kale
½ tsp black pepper
Freshly grated Parmesan cheese (to garnish individual bowls when serving)
In a medium soup pot, simmer ham bone in the chicken broth and water for 30-minutes or until meat is falling off bone. Remove bone and pick off meat, adding that back to the liquid in pot.
While the ham bone is simmering, heat olive oil in a large saucepan over medium-high heat until shimmering. Add onions, carrots, celery and tomato and cook, stirring frequently, until softened but not browned, about 3 minutes. Add garlic and cook, stirring constantly about 1 minute. Set aside until broth is ready.
Add the onion, carrot and celery mixture to the soup pot. Then add beans and their liquid, oregano, and bay leaves. Increase heat to high, and bring to a boil. Reduce to a bare simmer, add kale, cover and cook for 20 minutes.
Discard the bay leaves. Season to taste with salt and pepper. Ladle into bowls, sprinkle with a grating of Parmesan cheese, and serve with crusty bread.
