CREAMY PARMESAN SPAGHETTI
This creamy parmesan spaghetti pasta dish is quick and easy to make in about 15 minutes. Thick spaghetti cooked in a rich creamy easy homemade sauce made with garlic, chicken stock, milk, parmesan cheese and seasoning.
Servings: 2
Shopping List:
1 tbsp. olive oil
1 tbsp. minced garlic
16 ounces chicken stock or broth
8 ounce milk or heavy cream
2 tbsp. butter
1 tbsp. kosher salt (if using table salt use 1/2 that much and keep in mind the salt in the stock and butter)
1/2 tsp. black pepper
4 ounces thick spaghetti (2 bunches each equaling the size of a quarter)
1/4 cup finely grated parmesan cheese, more for garnish
Italian parsley for garnish
Directions.
In a sauce pot over a little more than medium heat, add the oil and garlic. Sauté about 45 seconds until the garlic is fragrant.
Add the stock, milk, butter, salt and pepper. Stir to combine. Then add the spaghetti. Bring to a small simmer and reduce heat to medium.
Cook, stirring occasionally, until the spaghetti is al dente and the sauce has thickened. About 14-15 minutes. Keep and eye on the bottom so the spaghetti don't start sticking.
Add the 1/4 cup parmesan and toss.
Bowl up and garnish with more parmesan cheese and parsley.
Serve and enjoy!

Ingredients -
400g (14oz) - Spaghetti
1 Tbsp (20ml) - Olive Oil
1 1/2 Tbsp (21g) - Unsalted Butter
4 - Garlic Cloves, Thinly Sliced
1 - Whole Lemon, Zest Thinly Sliced
1/2 - Lemon, Juiced
1 Cup (250ml) - Thickened Cream
10g (0.35oz) - Curley or Flat Leaf Parsley, Roughly Chopped
Seasoning To Taste
Notes -
This recipe is strong on lemon so adjust it to your taste. The first time I made it, I put way too much lemon juice in (I used 1 whole lemon) and it ruined the dish. I've now reduced it to half and I think it's the perfect balance. If you’re concerned, you can add the zest and cream and squeeze 1 quarter of a lemon into the sauce and adjust that way. Half a lemon works well though, so don’t worry.

-1/4 cup (113 g) butter (1/2 stick)
-4 cloves (4 cloves) garlic , minced (or 2 teaspoons garlic powder)
-1/4 cup (30 g) all-purpose flour
-2 cups (480 ml) milk
-1/4 teaspoon (1.25 ml) dried herbs (basil, oregano, thyme, etc.)
-1/2 teaspoon (2.5 ml) dried mustard powder
-1 cup (100 g) grated Parmesan cheese

Cacio e Pepe Recipe
Serves 4
1 pound bucatini
Kosher salt
4 Tbsp. unsalted butter, cubed, divided
Cracked black pepper, to Taste
1 cup finely grated Grana Padano or Parmesan
1 cup finely grated Pecorino
PREPARATION
To a pot of boiling water, add the kosher salt and bucatini. stirring occasionally, and cook until al dente. About 7 minutes. Drain the pasta, reserving at least 1 cup of pasta cooking water.
Melt 2 Tbsp. butter in a large heavy skillet over medium heat. Add pepper and cook, swirling pan until aromatic, about 1 minute.
Add ½ cup reserved pasta water to the skillet and bring to a simmer. Add cooked pasta and remaining butter. Reduce heat to low and add Grana Padano, stirring and tossing with tongs until melted. Remove pan from heat; add Pecorino, stirring and tossing until cheese melts, sauce coats the pasta, and pasta is al dente.
Transfer pasta to a warm plate, top with more cheese and cracked pepper, and serve.
