1 lb Cod,
1/2 cup Basil,
freshCherry tomatoes - 200g,
3 large Garlic cloves,
1/2 tsp Lemon, fresh zest,
1 tbsp Lemon juice, fresh,
Salt, black pepper and smoked paprika to your taste,
4 tbsp Olive oil,
50ml White wine, dry

Easy baked fish in tomato and white wine sauce .
This recipe serves : 1
Serve with a green salad and fried / boiled potatoes or potato mash and steamed vegetables
Ingredients :
Your favorite Fish - 250g , gutted , scaled and pat dry
Onion - 2 thick slices
Lemon- 2 thin slices ( seeds removed)
Garlic - 1 clove
Dry thyme- 1/4 tsp
Salt - 1/4 tsp
Olive Oil- 1 Tbsp
For the Sauce :
Olive oil- 2 tbsp
Onion- 1 small chopped
garlic- 2 cloves minced
Tinned anchovies- 3/4 tsp
White wine - 1/4 cup
Tomatoes- 4 medium , skinned, deseeded and chopped
Dry thyme - 1/4 tsp
Salt - 3/4 tsp
Lemon juice- 1 tbsp
Mediterranean Baked White Fish in Tomato Sauce
A simple and healthy Mediterranean dish you can make in 35 minutes. The sour dough bread is crunchy on top and also soaks up the sauce on the bottom. So tasty!

Chef Massimo Gaffo's Bronzini Fillet over Spinach with Tomato Wine Sauce! Fresh & Delicious!
Ingredients
-Bronzini Fillet
-Julienned Russet Potato
-Flour
-Salt & Pepper
-Cherry Tomatoes
-Onion
-Minced Garlic
-Spinach
-Olive Oil
-Basil
-Thyme
-White Wine
Directions
1. Heat a pan over high heat and add oil to the pan. Once the pan is hot, add the julienned potatoes. Cook for 5-6 minutes. Remove from pan and place onto dish.
2. Add more oil to the hot pan and reduce heat to medium.
3. Lightly flour the bronzini fillet and season with salt and pepper.
4. Place the fillet into the pan and cook for 5 minutes per side. Remove from pan and set aside.
5. Leave the oil from cooking the bronzini fillet in the pan. Add fresh onions and sauté for 20 seconds. Add minced garlic and cherry tomatoes and season with salt and pepper.
6. Add a dash of olive oil and continue to cook.
7. Add a splash of white wine to the pan and continue to cook. Break off sprigs of fresh thyme and add it to the simmering vegetables. Add fresh basil, lightly torn to release flavor.
8. Add the bronzini fillet back to the pan and remove from heat.
9. In a separate pan over medium heat, sauté the spinach with a little bit of olive oil and salt and pepper.
10. To plate, create a base from the sautéed spinach and lay the bronzini fillet on top of the spinach. Place the tomato sauce mixture on top of the fillet and finish with fried julienned potatoes.
