Valentine's Day Fortune Cookies!

These fortune cookies are easy to make. They make great gifts to give to your special someone on Valentine's Day or just to eat on a regular Thursday like me.. uh what?
I got the idea from this blog: they made them a lot better than I did.
Ingredients:
2 large egg whites
½ teaspoon vanilla extract
½ teaspoon almond extract
3 tablespoons vegetable oil
½ cup flour
1 ½ teaspoon cornstarch
Dash salt
½ cup sugar
3 teaspoons water
Red or pink food coloring
Melted chocolate
Sprinkles
Makes about 10-12 cookies
In a bowl, add egg whites, vanilla extract, almond extract and oil. Beat the mixture until it's frothy. Then sift in the flour, cornstarch, salt, sugar and water. Mix until smooth.
Divide the batter in half and add couple drops of red food coloring into one mixture.
On a greased cookie sheet, add 1-2 tablespoons of batter and make a circle. It should be roughly 4 inches in diameter. This is where you can decorate it how ever you want it. Then place the cookies in a 300 F degree oven. Depending on your oven, it should take 10-13 minutes. They should be lightly golden brown on the edges. Make sure to watch them carefully so it doesn't burn. When you take it out of the oven you need to work quickly! That is why you should do two cookies at a time. You can see in the video how I messed up. So with a spatula, flip the cookie and put your message in the middle. Fold the cookie in half and use a cup to bend it down the middle. Then place it in a cupcake tin so it holds its shape. If your designs didn't turn out like you wanted them to you can dip the fortune cookies into melted chocolate and add sprinkles! Place them in the fridge so that the chocolate cools and hardens. Then enjoy!

Makes about 25 cookies
Ingredients:
1 cup (230g) Butter, softened
2 cups (250g) Flour
2/3 cup (85g) Powdered sugar
Optional additions:
Vanilla extract
Salt
Sugar for coating
Directions:
1. Preheat oven to 350F (180C). Line a baking tray with parchment paper, set aside.
2. In a large bowl cream together the butter and powdered sugar until light and fluffy. Add the flour and mix until combined. If the dough is too soft, add 2-3 tablespoons of flour
3. 2 ways to shape the cookies:
A. Shape the dough into a disk form, wrap in plastic wrap and refrigerate for 1 hour. Then, roll out the dough into 1/4-inch (1/2cm) thick. Then, cut into desired shape (hearts, round, rectangle).
B. Roll the dough into a log shape, wrap it with plastic wrap and freeze for 30 minutes. Then, unwrap and slice the log into 1/4-inch (1/2cm) thick slices.
4. Transfer the cookies to the baking tray and bake for 12-15 minutes, until slightly golden.
5. Allow to cool.
Notes:
• Cookies can be stored in an airtight container up to 3 days.
• If the cookies are too soft, refrigerate for 30 minutes before baking

HOMEMADE FORTUNE COOKIES

INGREDIENTS:
1 egg white
3 tbsp melted butter
1/3 cup sugar
1/4 cup flour
PLUS:
CLASSIC: 1/2 tsp vanilla or almond extract
RED, WHITE CHOCOLATE: 1 drop red food coloring & 1/4 cup melted white chocolate
DARK CHOCOLATE ORANGE: 1/8 tsp orange extract & 1/4 melted dark chocolate
MATCHA GREEN TEA: 2 tbsp matcha powder
DIRECTIONS:
Pre-heat the oven to 400F. Cut out small pieces of paper and write your desired fortunes on them. Make sure to fold the paper in half, as to not get the ink on the cookie.
Whisk the egg white, melted butter, sugar and desired flavoring together in a bowl until smooth. Then add the flour and continue to mix until their are no lumps.
Trace 2, 3 1/2 circles on parchment paper and place it on a baking sheet face down, so that the pencil marks are not touching the cookie.
Place a small amount of batter in the center of the cookie, and with the back side of a spoon, smooth out the batter into the shape of the marked circle.
Note*: Make sure your batter is not too thick.
Bake in the oven for 4-5 minutes, or just until the edges become slightly browned.
take out of the oven and immediately add the fortune to the center of the cookies. Then take a spatula and fold one on the edges over to the other edge, to form a half circle. Do this to both cookies. Then, let them cool for 20 seconds, so that they are still very warm, but do not burn your fingers. Take the cookie and bend it over the edge of a cup, with the seam face up. Place the cookies in a cupcake tin while they dry, about ten minutes, so they hold their shape. Then dip them in chocolate if desired or serve as is.
Let the chocolate covered cookie harden on wax paper, before serving.
