How To make French Chocolate Cake
7 oz Semisweet chocolate
14 tb Butter or margarine
4 Eggs
3/4 c Sugar
1 c Flour
1/3 c Hazelnuts, coarsely chopped
1 ts Baking powder
Makes about 10 servings Preheat oven to 425 degrees F. Grease a springform pan with detachable bottom that has a diameter of about 9 1/2 inches. Melt cooking chocolate and butter in a thick-bottomed pot over low heat. Beat eggs and sugar until light and airy. Carefully stir the somewhat cooled chocolate mixture into egg mixture. Blend flour, nuts, and baking powder together, and fold carefully into batter. It's important to fold it in gently. Pour batter into pan and bake in the oven for about 15 minutes. The cake should not become firm. The "unbaked" batter tastes like a delicious filling. You may garnish cooled cake with a bit of grated chocolate and a ring of whipped topping. Recipe
Yield: 1 9-inch (23 cm) torte
Serves: 12
Prep Time: 20 minutes
Cook Time: 25-30 minutes
Ingredients
14 oz (420 g) bittersweet chocolate, chopped
½ cup (112 g) unsalted butter, cut into pieces
7 large eggs, at room temperature and separated
1 Tbsp (15 mL) balsamic vinegar
½ cup + 2 Tbsp (125 g) granulated sugar (caster sugar)
1 tsp (5 mL) vanilla extract
½ tsp (2 mL) salt
icing sugar, for dusting
Directions
1. Preheat the oven to 375 F (190 C). Grease a 9-inch (23 cm) springform pan and coat it with sugar, tapping out any excess.
2. Melt the chocolate and butter in a metal bowl placed over a pot of barely simmering water, stirring gently until smooth. Set aside (it can still be warm when added to the batter).
3. White the egg whites with the balsamic until foamy, then add 2 Tbsp (25 g) of sugar, whipping until they hold a soft peak when the beaters are lifted. Set these aside.
4. Whip the yolks with the remaining ½ cup (100 g) of sugar, vanilla and salt on high speed until they hold a ribbon when the beaters are lofted, about 3 minutes. Fold the melted chocolate in by hand (you can use a whisk to start and then switch to a spatula) and then fold in the whipped whites in 2 additions. Pour the batter into the prepared pan and bake for 30 to 35 minutes, until the top of the torte looses its shiny and souffles a little (the torte will collapse a bit after it is pulled from the oven, and a crack or 2 may develop – that is expected). Cool the torte in its pan on a cooling rack and chill for at least 2 hours before slicing to serve.
5. To serve, run a palette knife along the inside edge of the pan and release the springform ring. Use the same palette knife to loosen the cake from the bottom and slide it onto a platter. Dust the cake with icing sugar.
The torte is best served lightly chilled. It can be made and chilled up to 2 days in advance, but pull it from the fridge at least 2 hours before serving, to bring out the full flavor of the chocolate.

Gâteau au Chocolat | French Classic Chocolate Cake Recipe | Rich & Super Moist
Gâteau au Chocolat is French and it means ‘Chocolate Cake’. It is a classic French cake made with ingredients that we usually have at home. This is my favourite chocolate cake, and everyone in my family loves it.

Cook Time: 40 min
Total Time: 50 min
Yield: 1 serving (6 inch / 15cm round cake tin removable bottom)
Ingredients
(A)
85g chocolate chips (semi-sweet)
65g unsalted butter
25g cocoa powder
1 tsp cake flour
2 egg yolk (40g)
30g sugar
(B)
2 egg white (60g)
30g sugar
[ Decoration ]
1 tsp icing sugar
Instructions
Ingredients (A)
Melt chocolate and butter in a double boiler. Mix well with a whisk. Sift the cake flour and cocoa powder together. Add the flour mixture into the melted chocolate mixture. Fold until well combined. Break the egg yolk. Add the sugar in 3 times and beat until pale yellow. Add in melted chocolate mixture. Fold until well combined.
Ingredients (B)
Beat the egg white until foamy. Add the sugar in 3 times and beat until stiff peaks form. Add 1/3 of the egg white to the yolk batter and fold with a spatula until 80% done. Add another 1/3 and fold. Add another 1/3 and fold until well combined.
Pour the batter into the cake tin. Tap the cake tin on table a few times to remove air bubbles. Bake in preheated oven at 160°C for 40 minutes. Leave to cool on a wire rack. Remove the cake from the cake tin. Dust some icing sugar on top.
Tips: You can also add strawberries and whipping cream on top for a better design and taste, or you can also add ice cream on each serving.

This French chocolate cake recipe is pretty much like the lave cake recipe I made earlier. The only difference is we bake this cake bit more time in a large pan. So, the interior of the cake is not runny anymore.
