Bacon and Tomato Pasta

Ingredients
2 tablespoons kosher salt
16 ounces spaghetti pasta
1 pound thick-cut bacon or pancetta, chopped
3 tablespoons extra-virgin olive oil
1 cup red onion, diced
1 teaspoon red chili flakes
3 tablespoons garlic, minced
2 cups Roma tomatoes, diced
1/4 cup red wine
4 tablespoons basil, chiffonade
1/4 cup freshly grated Parmesan
Salt and freshly ground black pepper
Directions
In a large stock pot, boil 3 quarts of water, when boiling add 2 tablespoons kosher salt and the pasta and cook until the pasta is al dente.
In a large saute pan over medium heat, add bacon and saute until bacon is crispy. Remove bacon to drain on a paper towel-lined plate and remove 3/4 of the bacon fat from the pan. Add extra-virgin olive oil, onions, and red chili flakes. Cook until onions are translucent, add garlic, cook for 2 minutes then add tomatoes. Saute for 5 minutes, then deglaze with wine.
Drain pasta and add to the tomato mixture pan. Add basil and bacon. Toss with Parmesan, and add salt and pepper, to taste.

CREAMY BACON PASTA RECIPE | Pasta Cheese Sauce Recipe | How To Make Cheesy Fettuccini Pasta

INGREDIENTS
12 oz bacon (optional)
1 lb uncooked fettuccini pasta
salt for pasta water
CHEESE SAUCE
2 tbsp rendered bacon fat (or butter)
3 tbsp minced onion
2 cloves minced garlic
pinch of salt
(3) 12 oz cans evaporated milk (or half and half)
pinch of freshly grated nutmeg (optional)
1/4 tsp cracked black pepper
4 oz grated parmesan cheese
8 oz shredded mozzarella cheese

This dish is easy to make for lunch or dinner. Make sure you use fire roasted diced tomatoes as they give it a better flavor. There are some red pepper flakes for just a touch of heat. I like to use just a little for that hint of heat.
This dish can easily be converted to gluten free by using gluten-free noodles.
Ingredients:
2 Tbsp. olive oil
1/4 cup red wine
3 small cans of fire-roasted diced tomatoes
fresh parmesan cheese
1/4 cup fresh parsley, chopped
1/2 tsp. dried rosemary
1/2 tsp. dried oregano
1 clove garlic, minced
1/4 tsp or less of red chile flakes
1 large yellow onion, diced
4 leaves of fresh basil, chiffonade
6 slices bacon
9 oz. spaghetti pasta
salt to taste
Directions:
Cut bacon into small pieces. In a large frying pan over medium high heat, add the bacon and cook, stirring frequently until done. You may have to reduce the heat to low about half way through the cooking process.
Place the cooked bacon on a paper towel covered plate and keep warm.
Drain all but about 1 to 2 tsp. of the bacon fat from the pan. Add 1 Tbsp. olive oil to the pan and cook the onion over medium high heat. After about 4 or 5 minutes reduce the heat to low and continue cooking the onion, stirring frequently for an additional 15 minutes.
Add the garlic and cook an additional 2 minutes.
Add the red pepper flakes and cook 30 seconds stirring constantly.
Add the tomatoes, rosemary, oregano, parsley, and the wine and bacon and stir to combine. Simmer for 10 minutes while you cook the pasta.
Drain pasta and place it in a warmed bowl. Add sauce to the bowl and toss. Add the basil and toss again.
BTW, chiffonade is where you stack the basil leaves on top of each other so they are flat. Then roll the leaves up tightly into a tube. Thinly slice the basil tube on a slight angle. You end up with thin ribbons of basil.
Grate fresh parmesan over the pasta and serve with frech bread, and a glass of wine.
In this recipe I took a basic Amatriciana Italian recipe and ramped it up to my liking.
