Friendship Cake, Fremented Fruit, Step #1
Friendship Fruit Cake! This is the start of a fermented fruit cake that my mom makes every year for the holidays. She uses the starter from what she drained from the fruit of the previous year. I've added a link to the basic recipe and it has how you can make your own starter to use over and over again. I hate fruit cake but this is the best ever!!! It is called, Friendship Cake! It takes 30 plus days for the fruit to be ready and then if you are not ready to use it, you can store it in the fridge or freezer until needed. Let's ferment some fruit!!!

AMISH FRIENDSHIP BREAD-- MAKING STARTER & BREAD
This delicious, wonderful and versatile bread has been in the community forever. The starter is easy to make, and the bread/cake is tremendously versatile with many options of nuts, coconut, raisins, chocolate or white chocolate chips and even using different pudding flavors or fruits or even zucchini! And you share it! What's better than that? It's what friendship is all about.
AMISH FRIENDSHOP BREAD
STARTER and DAY 1
INGREDIENTS
¼ ounce active dry yeast or 1 package
¼ cup warm water 110° F/45° C
1 cup flour
1 cup milk
INSTRUCTIONS
In a small bowl, dissolve yeast in water. Let stand 10 minutes.
In a 2-quart glass, plastic or ceramic container, combine 1 cup flour. Mix thoroughly with a whisk or fork.
Slowly stir in 1 cup milk and dissolved yeast mixture.
Cover loosely and let stand at room temperature until bubbly. Consider this Day 1 of the 10-day cycle. For the next 10 days handle starter according to the instructions for Amish Friendship Bread
Day 2--- stir (wooden spoon best or use the zip lock bag method. Avoid metal.)
Day 3--- Stir
Day 4--- Stir
Day 5-- Add 1 C flour, 1 C sugar, 1 Cup milk..stir.
Day 6--- Stir
Day 7--Stir
Day 8-- Stir
Day 9-- Add 1 C milk, 1 C flour, 1 C sugar...stir
Day 10-- stir and use.. make the bread/cake! Gift starter to friends .. 1 C starter in a ziplock bag with recipe.
BREAD/CAKE INGREDIENTS
1 cup Amish Friendship Bread Starter
3 eggs
1 cup oil
½ cup milk
1 cup sugar
½ teaspoon vanilla
2 teaspoons cinnamon
1½ teaspoon baking powder
½ teaspoon salt
½ teaspoon baking soda
2 cups flour
1 small box vanilla instant pudding
1 cup nuts chopped (optional)
1 cup raisins (optional)
INSTRUCTIONS
Preheat oven to 325° F (165° C).
In a large mixing bowl, add ingredients as listed.
Grease two large loaf pans.
Dust the greased pans with a mixture of ½ cup sugar and 1½ teaspoons cinnamon.
Pour the batter evenly into loaf or cake pans and sprinkle the remaining cinnamon-sugar mixture on the top.
Bake for one hour or until the bread loosens evenly from the sides and a toothpick inserted in the center of the bread comes out clean.

NOTES
This recipe is very versatile! Use 1 or 2 boxes of pudding (pudding boosts flavor and moisture, but you can also leave it out or make your own). Add 1 cup of dried fruit, nuts or baking chips of your choice.
Looking to make your Amish Friendship Bread healthier? Swap out ½ cup oil plus ½ cup applesauce or 1 egg plus ¼ cup mashed banana. Reduce sugar to ⅔ cup or replace with ⅔ cup honey.

Amish Friendship Cake Starter
Amish Cake/Bread Starter
1 Cup flour
1 Cup Sugar
1 Cup Milk
Mix all together
Day 1 is the day you mix these ingredients together. Stir days 2-4. Day 5 add each ingredient again. Stir days 6-10. On day 10 divide starter into freezer bags putting one cup in each bag. Save about 1/3 cup of starter to add to your next starter.
