How To make Funnel Cake Mix Recipe:
1 cup all purpose flour
1 tsp baking powder
1/4 tsp salt
1/2 tsp cinnamon
Combine all ingredients, stirring well. Store in airtight container. To make Funnel Cakes: Pour vegetable oil into a round heavy pot to a depth of one inch. Heat oil to 360 degrees over medium-high heat (may need to be higher). In a small bowl, combine 1 egg with 3/4 cup milk. Add 1 cup Funnel Cake mix and beat with fork until smooth. Holding = finger under funnel opening, pour about 1/4 cup of batter into funnel. Allow batter to pour from funnel into hot oil, moving funnel in a circle to form a spiral shape. Fry 1 minute, turn cake, and continue frying until golden brown. Remove to paper towels to drain. Sprinkle with confectioners sugar or a mixture of cinnamon and sugar. Makes 6 Funnel Cakes. Funnel Cake Made EASY With Pancake Mix
Think you can only have funnel cakes at the fair? Jax Tranchida proves you wrong with boxed pancake mix!
RECIPE:
Vegetable oil, for frying
1 cup buttermilk pancake mix
1 tablespoon sugar
1/2 cup water (approx.)
1 teaspoon vanilla extract
Powdered sugar
1. Fill an 8-inch skillet halfway with oil, then turn it to medium heat until it reaches about 360 degrees.
2. Add pancake mix to a bowl and whisk in the water, sugar, and vanilla. Batter should be the thickness of cake batter, not too runny and not too gooey. It should fall from the whisk like ribbons. Pour batter into a bottle with a 1/4-inch nozzle, or use a plastic sandwich baggie with the corner cut off.
3. Test oil by dropping a small dot of batter in the pan. It should quickly float and bubble around the edges without burning. If oil is ready, quickly squeeze the batter in a circular motion into the frying pan, forming a 5-inch disk. Cook about a minute until golden brown on the bottom. Flip and cook other side, about 30 seconds to 1 minute, until golden brown.
4. Remove from the oil and transfer to a plate lined with paper towels. Sprinkle with powdered sugar and serve warm.

Ingredients
2 cups all-purpose flour 250g
2 Tablespoons granulated sugar
1 teaspoon baking powder
1/2 teaspoon salt
1 cup milk 236ml¹(see note!)
2 large eggs lightly beaten
1/2 teaspoon vanilla extract optional
Vegetable oil for frying
Powdered sugar for dusting funnel cakes
Instructions
00:00 Introduction
00:30 In a medium-sized bowl, whisk together flour, sugar, baking powder, and salt until well-combined.
00:52 In a separate bowl, whisk together milk, eggs, and vanilla extract (if using) until well-combined.
01:24 While whisking, gradually add dry ingredients to wet, stirring until mixture is smooth and combined (see note about milk!). Set aside.
01:49 Fill a medium-sized saucepan 2-3” deep with vegetable oil. Set on stovetop over medium-low heat and place a candy thermometer in the oil (make sure the tip of the thermometer is in the middle of the oil and not touching the bottom or it will read hotter than the actual temperature of the oil). Heat oil to 370-375F (187-190C).
02:45 Once oil is heated, portion about 1/3 - ½ cup of batter into a measuring cup with a spout. Slowly drizzle batter into oil, swirling and criss-crossing the batter over itself. Fry on each side until golden brown (about 90 seconds per side) then remove to a paper-towel lined plate.
04:12 Repeat with remaining batter but make sure that oil returns to temperature in between batches.
04:19 Dust with powdered sugar and serve warm.
NOTES:
¹You can see me on camera making this recipe with the exact ingredient quantities listed. I tested this recipe over a dozen times with the ingredients as written. However, sometimes the batter comes out too thick for people. If your batter is thicker than shown in the video, add additional milk as needed until it reaches a pourable consistency like shown in the video.
