How To make Greek Potato Salad
1 1/2 lb Round Red OR White
Potatoes 5 c Water
Purple Onion Rings 1/2 c Coarsely Chopped Cucumber
5 Cherry Tomatoes, Halved
1 sm Clove Garlic
1/4 c Plain Low Fat Yogurt
2 tb Crumbled Feta Cheese
1/4 ts Dried Oregano,
1/8 ts Dried Rosemary Crushed
1/8 ts Pepper
4 Ripe Olives
1 tb Chopped Fresh Parsley
Combine Potatoes & 5 C. Water in A Large Saucepan; Bring To A Boil. Cover, Reduce Heat & Simmer 15 Min. OR Till Tender. Drain Potatoes & Chill. Cut Potatoes Into 3/4 in. Cubes. Combine Potatoes, Cucumber,& Tomatoes in A Large Bowl. Set Aside.Drop Garlic Through Chute in Processor With Processor Running. Process About 3 Sec. OR Until Garlic Is Finely Chopped. Add Yogurt &Feta Cheese, Oregano & Rosemary. Process Until Smooth. Add Yogurt Mixture To Reserved Potato Mixture; Toss Gently To Coat. Garnish With Parsley, Olives & Onion Rings If Desired. Cover & Chill Thoroughly. (Fat 1.3. Chol. 5.)

In the mean, I have the perfect little recipe for the upcoming BBQ season. This Greek Potato Salad is a great little twist on a classic backyard recipe. Quick, simple, and tastes freaking awesome! Greek Salad Potato Salad from Tarpon Springs

Ingredients
For the Potato Salad:
1 and 1/2 pounds (about 6) Russet Potatoes, peeled and cubed
1/2-3/4 cup mayonnaise
1/4 cup plain yogurt
2-3 tablespoons vinegar
salt and black pepper to taste
1 teaspoon dried dill or 1 tablespoon fresh dill
The Greek Salad:
1 head Romaine lettuce, washed and thinly sliced
1 English cucumber, peeled and diced
4 scallions, thinly sliced
1 bell pepper, sliced into thin rings
1/4 cup finely chopped parsley
15 grape tomatoes, halved
12 olives, pitted and halved
2-3 peperoncini peppers, sliced
3-4 ounces feta cheese, crumbled
1 teaspoon dried oregano
The Salad Dressing:
1/3 cup olive oil
1/4 cup vinegar
1/2 teaspoon salt
Instructions
Make the Potato Salad: Place the potatoes in a pot and cover them with cold water. Season with a teaspoon of salt and bring to a boil. Reduce the heat to medium and boil until the potatoes are fork tender. About 15 minutes. Drain the water and place the potatoes in a mixing bowl.
Season the potatoes with some salt and black pepper. Add the mayonnaise, yogurt, and vinegar and toss to coat. Add the dill and toss. Taste and adjust the seasoning if needed.
Chill the potato salad in the refrigerator. This can be done overnight or for an hour.
Make the Greek Salad: Combine all of the salad ingredients in a large bowl and add the dressing. Toss to coat.
Serve: Place the potato salad in a large serving bowl and top with the greek salad. Kali Orexi!
Notes
Optional: Add boiled eggs, anchovies, and more herbs to the salad if desired.
Make the potato salad the day before and store it in an airtight container in the refrigerator.

How To Make Greek Potato Salad - Recipe
Made with yogurt, this Greek Potato Salad has a light, refreshing taste.
INGREDIENTS
1 lb (450g) potatoes, chopped 1/2” (10-12mm)
1 Asian cucumber, chopped
1/2 cup plain yogurt
1/4 cup mayonnaise
2 tbsp olive oil
2 tsp vinegar
1 clove garlic, crushed
1/2 tsp dried dill
1/4 tsp pepper
Dash salt
DIRECTIONS
1. Boil potatoes for 10-15 minutes - until fork tender.
2. Whisk together all ingredients other than potatoes and cucumber.
3. Add potatoes and cucumber. Toss to coat with dressing.
