How To make Greek Potato Salad
1 1/2 lb Round Red OR White
Potatoes 5 c Water
Purple Onion Rings 1/2 c Coarsely Chopped Cucumber
5 Cherry Tomatoes, Halved
1 sm Clove Garlic
1/4 c Plain Low Fat Yogurt
2 tb Crumbled Feta Cheese
1/4 ts Dried Oregano,
1/8 ts Dried Rosemary Crushed
1/8 ts Pepper
4 Ripe Olives
1 tb Chopped Fresh Parsley
Combine Potatoes & 5 C. Water in A Large Saucepan; Bring To A Boil. Cover, Reduce Heat & Simmer 15 Min. OR Till Tender. Drain Potatoes & Chill. Cut Potatoes Into 3/4 in. Cubes. Combine Potatoes, Cucumber,& Tomatoes in A Large Bowl. Set Aside.Drop Garlic Through Chute in Processor With Processor Running. Process About 3 Sec. OR Until Garlic Is Finely Chopped. Add Yogurt &Feta Cheese, Oregano & Rosemary. Process Until Smooth. Add Yogurt Mixture To Reserved Potato Mixture; Toss Gently To Coat. Garnish With Parsley, Olives & Onion Rings If Desired. Cover & Chill Thoroughly. (Fat 1.3. Chol. 5.)

Greek-Style Green Bean & Potato Salad (Vegan Recipe for Lent)

Ingredients
1 and 1/2 - 2 pounds red, gold, or russet potatoes
1 and 1/2 pounds green beans, ends trimmed
8-10 Kalamata Olives, pitted and halved
1 teaspoon dried dill
salt, to taste
The Dressing:
1/4 cup olive oil
1//8 cup red wine vinegar
1/8 cup fresh lemon juice
1 tablespoon mustard
1 garlic clove, grated
Instructions
Peel the potatoes and place them in a medium saucepan. Cover them with cold water and season with 1 and 1/2 teaspoons salt. Bring to a boil and reduce the heat to medium. Cook the potatoes until they are fork tender, Larger potatoes will take longer to cook than smaller ones.
Lift the potatoes out of the water and set them aside to cool cool until they can be handled.
Add the string beans to the same pot and boil them for 7-8 minutes. Drain the potatoes and add them to a large bowl that has been filled with ice water. This will cool them quickly and hel them stay bright green and vibrant.
Combine the dressing ingredients in a bowl and whisk the together. (I usually double the amount of dressing).
Slice the potatoes into rounds or cubes and place them in a large bowl.
Pat the green beans dry and cut them in half and add them to the bowl with the potatoes.
Pour the dressing on top of the green beans and the potatoes.
Add the olives and dill, and toss.
Serve the salad slightly warm.
Notes
Leftovers will keep fresh in an airtight container in the refrigerator for up to a week.

πατατοσαλάτα
My Cookbook:
Serves 4:
1 and ½ pounds potatoes, cubed
4 scallions
Fresh parsley
Fresh dill
Optional: mint, rosemary
Kalamata olives, pitted and halved
3-4 sundried tomatoes (packed in oil), chopped
Garnish: 2-3 tablespoons pine nuts
Optional: 2-4 tablespoons plain whole milk yogurt or sour cream
For the dressing:
¼ - ½ cup extra virgin olive oil
2-4 tablespoons fresh lemon juice
1 teaspoon lemon zest
1 teaspoon Dijon mustard
Salt and freshly ground black pepper, to taste

Simplicity is the right word to describe this amazing Potato salad that you can never get tired of. It's a salad packed with colors, flavours & healthy ingredients, that serve to enhance the potato taste. A dish so easy to make, it's hard to mess up! Suitable for vegans. Serves 3-4 persons.
Ingredients:
4 Big good quality Potatoes (suitable for boiling)
2 tbsp. chopped Spring Onions
2 tbsp. chopped Parsley
60 ml. virgin Olive Oil
2 tbsp. Lemon Juice
1 tbsp. white wine Vinegar
1 chopped Florina Pepper (sweet smoked red pepper)
1 tbsp. French Mustard (mild)
5-6 Kalamata Olives (remove pits and cut in rings)
1 tbsp. chopped Pickled Cucumber (gurkin)
1 tbsp. Capers
Salt and ground Pepper
Optional: 1 tbsp. Mayonnaise
Ελληνική Πατατοσαλάτα
Σερβίρει 3-4 άτομα
Η απλότητα είναι η σωστή λέξη για να περιγράψετε αυτή την καταπληκτική πατατοσαλάτα που δεν πρόκειται ποτέ να βαρεθείτε. Είναι μια σαλάτα γεμάτη με χρώματα, γεύσεις και υγιεινά υλικά, τα οποία βοηθούν στην ενίσχυση της γεύσης της πατάτας. Ένα πιάτο τόσο εύκολο να γίνει, είναι δύσκολο να αποτύχεις! Κατάλληλο για χορτοφάγους και για νηστεία.
Υλικά:
4 Μεγάλες καλής ποιότητας Πατάτες (κατάλληλες για βρασμό)
2 κ.σ. ψιλοκομμένα φρέσκα κρεμμυδάκια
2 κ.σ. ψιλοκομμένος μαϊντανός
60 ml. παρθένο ελαιόλαδο
2 κ.σ. Χυμός λεμονιού
1 κ.σ. λευκό ξύδι
1 ψιλοκομμένη πιπεριά Φλωρίνης
1 κ.σ. Γαλλική μουστάρδα (ήπια)
5-6 Ελιές Καλαμών (κομμένες σε ροδέλες)
1 κ.σ. ψιλοκομμένο αγγουράκι τουρσί
1 κ.σ. Κάπαρη
Αλάτι και πιπέρι
Προαιρετικά: 1 κ.σ. Μαγιονέζα
Original Greek potato salad,like the old time/παραδοσιακη πατατοσαλάτα από τα παλιά χωρίς μαγιονέζα!

• ingredients:
- 6-7 potatoes in cubes
- 3 carrots in slices
- 1 bunch scallions
- 1/2 onion in slices
- 1 handful dill
- 2 minced garlic cloves
- salt as needed
- oregano as needed
- measure olive oil with your heart
- lemon juice from a whole lemon or as needed
• instructions:
- peel and cut the potatoes and the carrots in cubes
- either boil or steam ( like I did) until the potatoes are soft and tender enough but not as soft for mashed potatoes!
- transfer into a bowl as they are hot and add the scallions, the onion slices, the garlic, the dill, salt and oregano, the olive oil and the lemon juice
- then mix very well but gently at the same time until all the ingredients are fully combined!
- then serve and enjoy it eithe as a side dish with young fish or even as a quick lunch with feta cheese
