Best Quick Easy Green Bean Recipe - Tasty Veggie Recipe # 2
It is already November and Thanksgiving is around the corner. I want to share some of my favorite, healthy and tasty Thanksgiving side dishes with everyone. This week I want to share my favorite green bean side dish since green bean is a very common side dish during Thanksgiving.
Recipe:
Ingredients:
1 pound of green beans (ends trimmed)
1 cup halved cherry or grape tomatoes
1 small onion chopped
2 garlic minced
seasoning: salt, pepper, dried basil, red crushed pepper flakes
water and 1/2 stock cube or stock
1 tbsp olive oil
Instructions:
1. Turn the stove to medium high heat, pour in the olive oil and onion/garlic, and let it cook until the onion/garlic is soft/brown.
2. Add in the green beans, stir, add in the seasoning except for basil, stir.
3. Add in the tomatoes and basil, and stir very well.
3. Add in the water and stock cube or just stock (just enough to half cover the green bean mixture).
4. Let it simmer until the liquid is all boiled off. (about 10 min)
5. Season one more time with salt, pepper, basil, and red pepper flakes.
6. Turn off the stove and let it cool on the stove.

Nancy SOG Presents Mediterranean Green Bean Veggie Medley with Olives, Tomatoes, and Mushrooms
This one skillet dish is packed with a fresh & healthy cast of ingredients that i usually cook in the summer when we can harvest cherry tomatoes & herbs, but it’s become a family staple dish year round.
Prep time : 15 min
Cook time: 15 min
Serves 4
Ingredients:
1 pound green beans, cut & trimmed
1 1/2 cups cherry/ heirloom tomato
1 cup calamata olives
2 cups baby Bella mushrooms, quarter
1/2 red onion, sliced
6 cloves garlic, coarsely minced
2 Tbsp olive oil
2 tsp butter
2 tsp chicken broth paste
1 tsp oregano
1 tsp dried parsley
In a large, deep pan, heat up oil and butter & sauté the onion, garlic and cherry tomatoes at medium heat. Throw in the mushrooms and season with 1/2 tsp garlic salt, then cover for 1 minute. Add the green beans, chicken paste and calamata olives and the rest of the herbs, seasoning. Mix and cover for another 1 minute on low/ medium heat. Uncover and turn off heat. So quick and easy !! We of course serve this over steamed rice but any short pasta will pair well with this Tuscan inspired dish.

Roasted Green Beans and Mushrooms
These simple oven roasted green beans and mushrooms are great to throw together for your meal prep or family dinner.
1 pound green beans, cleaned and trimmed
2 garlic cloves, rough chop
1 shallot, sliced
2 small portobello mushrooms, sliced
Grapeseed oil
salt and pepper
Preheat oven to 400°F.
Toss all ingredients expect the mushrooms in the grapeseed oil. Scatter the mushrooms on the top of the green beans and spray lightly with cooking spray.
Roast in the oven 15-20 minutes, being careful not to overcook the green beans.

~ Asian flavored cherry tomatoes & green beans~
This simple dish is so good you could make it your main course! It's tasty, quick, filling and economical...enjoy!
Asian Cherry Tomatoes & Green Beans
6 ounces cherry tomatoes, halved
14.5 ounce can green beans, well drained
3 tablespoons chopped onion
1 teaspoon chopped garlic
1 tablespoon oyster sauce
1 teaspoon brown sugar
1/4 teaspoon cracked black pepper
1 tablespoon light olive oil
In a large, pre-heated skillet saute' onion until translucent. Add tomatoes. Cook and stir for about two minutes. Add chopped garlic and stir fry for one minute. Add drained green beans. Stir to heat through. Pour oyster sauce evenly over the vegetables. Sprinkle with brown sugar. Add the black pepper. Gently cook and stir to combine all ingredients without crushing the tomatoes. Serve hot. Makes one main dish, or two side servings.
