4 tbsp green seasoning
2 plum tomatoes, chopped
3 tbsp minced garlic, divided
1 onion, divided and chopped
Hot pepper, to taste
2 scallions, chopped
Bunch culantro or cilantro, chopped
4 tbsp curry powder
1 tbsp ground coriander (optional)
1 tsp garam masala or amchar masala (optional)
1 small eggplant, diced
1 tsp ground cumin
