Thai papaya salad (Som tam)

This is the first video in my Gapshida series that features a recipe from one of my readers. The first destination on my Gapshida tour was to visit Tanja Rogers in Canterbury, England.
She's been one of my readers for a long time, and she invited me to her house to share some traditional Thai recipes that she learned from her mother. For this salad she replaced papaya with swede (also known as rutabaga) because it's not easy for her to find a firm green papaya where she lives. When made with swede, this salad tastes almost the same as if it were made with papaya.
Directions:
1. Roughly crush a small handful of unsalted peanuts with mortar and pestle. Set aside. Wipe the mortar and pestle clean.
2. Melt palm sugar in a small pan at low or medium heat, adding 2 tbs of water. The cooking process should form a shiny and thick syrup. This makes it easier to mix the sugar with the salad.
3. Peel the papaya (or swede), shred it with a shredder (or a mandolin slicer) to thin stripes and soak them in cold water while you prepare the rest of the salad. This makes the papaya crunchier and gets rid of any excess starch from the swede.
4. Cut the green beans into one-inch pieces. Throw away the endings.
5. Take the chilies and peeled garlic and give them a gentle bash with mortar and pestle. You still ought to see bits and pieces, not a puree. Add the shrimps and continue bashing. Add the crushed peanuts and mix well.
6. Add the shredded papaya and continue bashing, but not too hard. Just enough so the mixture soaks up the flavours. Use a bigger table spoon as a support tool, that way you can shift the salad in the mortar and it doesn't fall out while bashing and mixing.
7. Add the liquid palm sugar, tomatoes, beans, lime juice and fish sauce. Continue to lightly bash, shift with the spoon, and mix a little more.
8. Serve on a big dish or bowl, sprinkle some crushed peanuts on top! Voila!
In Thailand it's usually served with sticky rice and along another dish called larb, a spice minced meat salad with raw vegetables.

Der berühmteste Salat und eine der meistgegessenen Speisen in Thailand – der Papaya Salat (Som Tam, ส้มตำ) mit grünen Papayas, Tomaten, grünen Bohnen, getrockneten Shrimps mit der einzigartigen Geschmacksmischung aus süß (Palmzucker), salzig (Fischsauce), sauer (Limetten) und scharf (Chilis).
In diesem Rezept zeigen wir dir, wie du einen authentischen Thai Papaya Salat machen kannst – mit einer kleinen Variation für extra Biss und farblichen Kontrast: Karotten.
REZEPT
Zutaten für 2 Personen:
- 200g grüne Papaya
- 30g Karotten
- 1 Schlangenbohne
- 4 Chilis
- 6 Thai-Knoblauchzehen (alternativ 2-3 normale Knoblauchzehen)
- 2 Esslöffel geröstete Erdnüsse
- 25g getrocknete Shrimps
- 3-5 kleine Tomaten
- 2 Esslöffel Palmzucker (alternativ weißer oder brauner Zucker)
- 2 Esslöffel Fischsauce
- 2 Limetten (ca. 2 Esslöffel)
Zubereitung:
1. Entferne die Schale der Papaya und der Karotte und wasche danach die Papaya, damit sich das Latex entfernt. Schneide die Schlangenbohne in ca. 3cm lange, die Tomaten jeweils in 4 und die Limetten in 3 Stücke.
2. Schneide die Papaya und die Karotte in Streifen. Es gibt 2 Möglichkeiten, die Papaya zu schneiden: In Thailand ist es üblich, mit einem großen, scharfen Messer der Länge nach auf das untere Ende zu klopfen und dann vorsichtig abzuschneiden. Du kannst aber auch einfach einen normalen Sparschäler verwenden. Im Video zeigen wir dir beide Techniken.
Anschließend die geschnittenen Papaya- und Karottenstücke in kaltes Wasser legen, damit sie schön knackig werden.
3. Stampfe die Chilis, den Knoblauch und die Hälfte der getrockneten Shrimps. Gebe die Schlangenbohnen und die Hälfte der gerösteten Erdnüsse dazu und nochmal leicht stampfen.
4. Vermische den Palmzucker mit der Fischsauce in einer großen Schüssel, bis der Palmzucker verschmolzen ist. Dann die gestampften Zutaten (siehe Schritt 3) dazugeben und vermischen. Nimm die Papayas und Karotten aus dem Wasser (warten, bis das Wasser weg ist, nicht drücken), und zusammen mit Tomaten, gerösteten Erdnüsse und getrockneten Shrimps (der Rest) dazugeben und gut vermischen, damit sich alles schön verbindet. Fertig!
Hinweis: Es gibt 2 Hauptarten von Papaya Salat in Thailand: Som Tam Thai (normaler Salat) und Som Tam Boo Pla Ra (mit fermentierter Fischsauce). Das ist ein Som Tam Thai Rezept – einfach zu kochen und lecker für jeden Geschmack.
Das Schöne am Papaya Salat ist, dass man den Geschmack individuell anpassen kann, also einfach mehr oder weniger Palmzucker (süß), Fischsauce (salzig), Limetten (sauer) und Chilis (scharf) verwenden.
Und noch ein Tipp: Solltest du keine grüne Papaya finden, kannst du alternativ auch Kohlrabi nehmen – schmeckt sehr ähnlich.

Thai Green Papaya Salad - Somtam ส้มตำ
How to make the mouthwatering Thai Papaya Salad (Somtam - ส้มตำ) with minimum ingredients?
When green papaya is hard to get here in Malaysia I grow my own papaya tree. I waited almost a year to pluck my first papaya to make this Somtam. The dish turned out so well as the papaya was freshly plucked from my own garden! It's best to use papayas that are almost ripe because you can easily get its natural sweetness while the texture is still crunchy. The ultimate X factor of this dish is its signature spicy, sour, sweet and salty taste all blended into one and that satisfying crunch with every bite! Once start eating, it's really hard to stop. Try having it with sticky rice, fried chicken and raw vegetable and you will be amazed by how these food compliments each other so well. Enjoy!

Ingredients:
3 cup of shredded green papaya
3 red bird's eye chilli
3 green bird's eye chilli
1 clove of garlic
1.5 tbsp of paste sugar or white sugar:
1.5 tsp of shrimp paste (reduce if very salty):
1 tbsp of concentrated tamarind water:

Green papaya salad also called Som Tum ส้มตำ is a spicy, sweet, and tangy salad made from shredded unripe papaya. The salad is very commonly available and popular in Thailand. In Thailand, green papaya salad is made using a clay mortar, a wooden pestle, and a spatula. To prepare the green papaya, first, you have to peel off the outer dark green skin. Then either use something like a grater or manually julienning the papaya with a knife. This salad is crunchy and extremely addictive.
Using either a clay mortar and pestle, stone mortar, or a wooden mortar, first pound the garlic and chilies, mix in the ingredients, and seasonings, and finally add the green papaya. It's more like pound and mix. This process is repeated. The salad here is not pounded a lot, just till the ingredients are smashed and released their juices.
