Art Barg's green tomato pie
103 year old Art Barg grew up on a farm and worked in the oil industry, but he might do his best work in the kitchen. He can often be found in his Good Samaritan Society – Grand Island Village apartment baking pies. He's good at making just about any flavor, but every fall he'll whip up a couple of his green tomato pies. Here's his recipe.
Green tomato pie (makes 2 pies, doesn't include crusts)
Mix
2 lbs. tomatoes (sliced thin)
3/4 cup brown sugar
1/2 cup sugar
1 tsp. cinnamon
1/2 tsp. ginger
1/2 tsp. nutmeg
1/2 tsp. salt
1 tsp. lemon juice
2 Tbs corn starch
Bake
450 degrees – 15 minutes
350 degrees – 40 minutes

GREEN TOMATO MINCEMEAT:
3 cups chopped apples, peeled and cored
2 cups chopped green tomatoes
2 cups raisins
2 cups brown sugar
1 cube butter
1/4 cup white vinegar
1 orange {grated rind {chopped segments
2 teaspoon cinnamon
1 teaspoon allspice
1 teaspoon cloves
1 teaspoon salt
mix all ingredients together in pot bring to boil at medium high, then simmer on low till thick; about 2-3 hours
Optional: if processing hot water bath for 25 minutes
FRUIT BREAKFAST BAR:
-CRUST:
1 1/2 cup whole wheat flour
1 1/2 cup rolled oats
1 cup brown sugar
1 1/2 cubes melted butter
1/2 teaspoon cinnamon
1/4 teaspoon baking soda
Mix dry ingredients, add melted butter and mix, keep separate 1 1/2 cups of crumb topping, press remaining into oiled/greased/sprayed 13X9 pan, spread 2 cups cooked fruit, and top with reserved crumbs. Bake @350 for 25 minutes

A good pie starts with a good pie dough, we used pie crust recipe #2 for this video. As I needed double pie crusts.
Pie Crust #1
(Single pie crust, bottom layer only)
1 C. Flour
1/3 C. Butter Chilled (Crisco Shortening works very well too, but not as healthy)
½ Tsp. Salt
4 Tbsp. Water
1 Tsp. White Vinegar
Procedure:
Put flour and salt mixed together into a bowl, cut in butter (or lard) until pieces are a little larger than peas size. Mix vinegar and water in a cup, add to flour mixture a tablespoon at a time until moistened enough to form a dough ball with your hands. Chill dough well, approximately 1 hour. On a floured surface roll out dough (can also roll out between 2 pieces of waxed paper) very thin, but not so thin that it can not be moved to pie pan without tearing. Use to line pie pan, or cut out small circles for lining tart pans. Use as directed by recipe. If crust need to be precooked, bake at 400*F for 10 to 12 minutes.

(Double pie crust for bottom and top layer pie)
1 2/3 C. Flour

5 Tbsp. Water
1 Tsp. Vinegar
Procedure:

Green Tomato Pie
(Will need double pie crust recipe)
½ C. Sugar
3 Tbsp. A.P. Flour
Zest of 1 Lemon
Juice of 1 lemon
¼ Tsp. Ground Cinnamon
¼ Tsp. Ground Nutmeg (optional)
¼ Tsp. Salt
4 C. Large Diced Green Tomatoes
¼ C. Puffed Raisins, soaked in hot water for at least 10 minutes.
3 Tbsp. Butter
Procedure:
Line a 9 inch pie pan with pie dough.
Mix together all ingredients, Scoop into pie shell until you reach the top of the pie dish, slightly over the top is ok. Place tiny pieces of butter all over the top layer of pie filling. Place the top crust on top and fork or flute around the edges to secure in place, cut air slices int top dough for venting.
Bake at 350*F for 35 to 40 minutes. The crust should be golden brown when done.
The Apple Pie recipe is very basic:
6 Apples Peeled, Cored, Large Diced
Juice from 1/2 a Lemon
1/2 Cup Brown Sugar
1 Tablespoon Cornstarch
1 Teaspoon Cinnamon
2 Tablespoons Butter
Procedure:
Place all in a bowl except butter and mix well. Place in preloaded with dough pie pan. Top with diced butter pieces. Top with pie crust, fork edges, cut air vents. Place in a 350*F oven for 35 to 40 minutes.
Green Tomato Pie
This recipe was handed down by generation. My grandma Maddocks (dad's mom) passed this to my mom as it was a favorite pie in the fall for my dad. You can use any favorite apple pie recipe. My husband found a recipe in the book shown in this video for Raw Vanilla Bean Ice Cream. WOW!!! Soooooo very good!! I hope you enjoy this and use up some of the tomatoes before they go south for the winter months!!
