How To make Green Tomato Puree
3 lb Green tomatoes
1/2 c Water
2 tb Sugar
Core tomatoes and cut into 1" chunks. Place in a stainless steel or enamelware saucepan. Add water and sugar. Bring to a boil over medium heat. Lower heat to a simmer. Cover. Cook 2 hours or until tomato bits are very soft. Place mixture, 1/3 at a time, in blender or food processor. Process until smooth. Mixture can be frozen. Serve tossed with pasta.

Making Salsa Verde | Preserving Green Tomato Harvest
Here in Michigan, we always end up with a LOT of green tomatoes still on the vine at the end of the season. One of our favorite things to do with them, is to make green salsa (Salsa Verde). Add in some jalapeno, cilantro, and lime juice - YUM!
For this video, I used the recipe from the Ball Canning Book ( found here ) and multiplied to factor-in how many tomatoes I had - and I had a LOT. Total cook time in the roaster ended up being almost 8 hours, to really get it cooked down well. And our house... of it smelled so good!
