How To make Green Tomato Pie Filling
4 qt Chopped green tomatoes
3 qt Peeled, chopped tart apples
1 lb Dark seedless raisins
1 lb White raisins
1/4 c Minced citron
-OR lemon or orange peel 2 c Water
2 1/2 c Brown sugar
2 1/2 c White sugar
1/2 c Vinegar (5%)
1 c Bottled lemon juice
2 tb Ground cinnamon
1 t Ground nutmeg
1 t Ground cloves
Procedure: Combine all ingredients in a large saucepan. Cook slowly stirring often, until tender and slightly thickened (about 35 to 40 minutes). Fill jars with hot mixture, leaving 1/2-inch headspace. Adjust lids and process. Table 1. Recommended process time for Green Tomato Pie Filling in a boiling-water canner. Style of Pack: Hot. Jar Size: Quarts. Process Time at Altitudes of 0 - 1,000 ft: 15 min. 1,001 - 6,000 ft: 20 min.

In my search for recipes for green tomatoes, I came across green tomato pie. Here is Brian's reaction to my experiment, let's just say I almost fooled him!

It really was tasty! Next time I would cut all the tomatoes very thin and add fewer tomatoes.
Green Tomato APPLE Pie | Freezer Ready Pie Filling
While processing my last batch of green tomatoes, I noticed quite a few of the really small ones looked like apples. I was reminded of Mrs. Lori' Brown's video on making mock apple pie filling with them, and decided to give it a go. While I have no need for an actual apple pie right now, we'll at least get the filling made, bagged up, and tossed into the freezer for when I do need some. Steps to make pie!
Art Barg's green tomato pie
103 year old Art Barg grew up on a farm and worked in the oil industry, but he might do his best work in the kitchen. He can often be found in his Good Samaritan Society – Grand Island Village apartment baking pies. He's good at making just about any flavor, but every fall he'll whip up a couple of his green tomato pies. Here's his recipe.
Green tomato pie (makes 2 pies, doesn't include crusts)
Mix
2 lbs. tomatoes (sliced thin)
3/4 cup brown sugar
1/2 cup sugar
1 tsp. cinnamon
1/2 tsp. ginger
1/2 tsp. nutmeg
1/2 tsp. salt
1 tsp. lemon juice
2 Tbs corn starch
Bake
450 degrees – 15 minutes
350 degrees – 40 minutes
Green Tomato Pie
This recipe was handed down by generation. My grandma Maddocks (dad's mom) passed this to my mom as it was a favorite pie in the fall for my dad. You can use any favorite apple pie recipe. My husband found a recipe in the book shown in this video for Raw Vanilla Bean Ice Cream. WOW!!! Soooooo very good!! I hope you enjoy this and use up some of the tomatoes before they go south for the winter months!!
