How To make Grilled Barbeque Chicken Breasts
4 Whole chicken breasts
Boneless, skinless 2 tb Peanut oil
Salt :
to taste Ground black pepper -- to Taste 1 c Barbeque sauce
Watermelon Pico de Gallo (separate recipe)
Preheat grill. Make sure grates are clean and lightly rubbed with oil. Brush chicken breasts with 2 tablespoons peanut oil and season with salt and pepper. Place on grill and cook for 5 minutes, basting with prepared barbeque sauce. Turn over, baste with barbeque sauce, and cook for about 5 minutes more or until juices run clear. Serve one breast per person, garnished with Watermelon Pico de Gallo (separate recipe). BAKED BARBECUE CHICKEN RECIPE
2 pounds boneless chicken breast
1/4 cup avocado oil
1/4 cup fresh lemon juice
1 teaspoon smoked paprika
1 teaspoon chili powder
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
1/2 cup barbeque sauce (store-bought or homemade)
Preheat oven to 400º F and line a rimmed baking sheet with parchment paper.
Place chicken between two pieces of plastic wrap or parchment paper and gently pound out the thicker side of the chicken until the breast is even in thickness.
Combine all ingredients, except for chicken in a large bowl and whisk well.
Place chicken in the FoodSaver Preserve & Marinate Containers and pour the marinade over the top. Use the handheld sealer to marinate the chicken in just 12 minutes.*
Place marinated chicken on a rimmed baking sheet lined with parchment paper and brush both sides with bbq sauce.
