How To make Grilled Breast Of Chicken w/Maple Whiskey Glaze
1 t DRIED THYME
2 CHICKEN brEASTS* boned, skin
1/2 c PURE MAPLE SYRUP
3 T JACK DANIEL'S WHISKEY
1 T VEGETABLE OIL
*Note: Chicken breasts should be boned, skinned & split. Rub thyme over both sides of chicken breasts. Combine syrup, whiskey and oil. Marinate breasts in the refrigerator for several hours. Grill or broil breasts, basting frequently with marinade for a shiny brown glaze. (Glaze burns easily, so watch carefully.)

Barbecue Chicken Halves
WHAT MALCOM USED IN THIS RECIPE:

- Killer Hogs The BBQ Rub
- Killer Hogs Hot Rub
- Killer Hogs The BBQ Sauce
- BBQ Gloves -
Barbecue Chicken Halves Recipe
- 1 whole chicken
- 1 gallon BBQ Brine (recipe below)
- 3 Tablespoons Killer Hogs Hot Rub
- 2 sticks butter
- 1 bottle Killer Hogs The BBQ Sauce
Directions:
1. Place whole chicken in a large meat bag or vessel large enough to hold it plus the brine liquid (recipe below). Pour the brine liquid over it and place in refrigerator for 6 hours.
2. Prepare smoker for indirect cooking at 275 degrees using hickory wood for smoke.
3. Remove the chicken from the brine and pat dry with paper towel.
4. Flip the chicken breast down and use meat scissors to remove the backbone. Flip it over and use a heavy chef knife to divide the bird into 2 halves.
5. Season each half on both sides with Killer Hogs Hot BBQ Rub.
6, Place the chicken halves on the pit and smoke for 1.5 hours.
7. Wrap each chicken half in foil - tear off enough foil to cover the half, split a stick of butter in half lengthwise, lay the butter on the foil and place half of chicken skin side down on the butter, season the back side with more Hot Rub, and close the foil up tight.
8. Place the wrapped halves back on the pit and cook for another 1.5 hours or until internal temperature reaches 165F degrees in the breast.
9. Carefully remove each chicken half from the foil wrap, season lightly with more hot rub followed by a good drizzle of The BBQ Sauce. Place each half back on the pit for 15 minutes then serve.
BBQ Brine
- 1 gallon water
- 1 cup Malcom’s Bird Brine
- 1/2 cup Killer Hogs The BBQ Rub
- 1/4 cup Killer Hogs Hot Sauce

Peach-Bourbon Glazed Chicken Thighs ????????????

For the peach bourbon glaze:
4 T butter
1 jar peach preserves
2 T Bourbon
A pinch of @wildforkfoods spicy mojo seasoning
-melt butter in a skillet over medium high heat (I did 400 degrees if you can fine tune it)
-add remaining ingredients and bring to a simmer, stirring as needed
-once the sauce has homogenized, set aside until ready to use
For the chicken:
-season chicken thighs with the same spicy mojo seasoning used in the sauce
-place the thighs skin-side down on a griddle over high heat (I did 500 degrees) for 5 minutes, then flip
-once the chicken registers 150 degrees, toss in the peach bourbon sauce and continue cooking until it registers a minimum of 165 degrees
-serve & enjoy!

Serves 4
2 ½ lbs boneless, skinless, chicken thighs, diced into 1 ½ inch pieces
1 1/2 T vegetable oil
Sauce
2 cloves garlic, chopped
3⁄4 t crushed red pepper flakes
1⁄2 c water
1⁄3 c light brown sugar
1⁄3 c soy sauce
1⁄4 c apple juice
2 T ketchup
2 T bourbon
1 T vegetable oil
1 T apple cider vinegar
1⁄2 t ginger, chopped
Grilled Chicken Bacon Skewers with Maple & Bourbon Glaze
This week on Three Kitchens Podcast, we're cooking with fire - again! You may be wondering what's with all the meat recipes at the moment. We've actually been calling April The Month of Meat, and while we didn't really plan it that way, we admit we're loving it.
This week, Erin is grilling bacon-wrapped chicken skewers, finished with a maple and bourbon glaze (drooling yet?). This amazing recipe comes from Derek Wolf from overthefirecooking.com ( . If you aren't familiar with his food, go check it out. You will want to eat every single thing he cooks (don't say we didn't warn you). He was inspired to learn to cook with fire by a favourite celeb chef of ours, Francis Mallman. With a muse like that, you really can't go wrong.
Erin also made an easy lemon rice to serve alongside the chicken. The bright lemon flavour comes from dried lemon peel, but you could also use lemon zest.
You may think wrapping pieces of chicken in bacon sounds tedious, but Erin promises it doesn't take as long as you may think, and we all agree it is well worth it. This is a fantastic recipe, one that will be on our BBQs all summer long. And we think you'll want it on yours, too.
