How To make Grilled Chicken Breast with Corn & Tomato Salsa
Ingredients

chicken, breast halves *see note

oil, olive

pepper, black, cracked

garlic, clove, minced

each
rosemary, sprig

thyme, sprigs

mustard, dijon
corn and tomato salsa:
6
each
tomatoes, roma
1 1/4
cup
corn, fresh, kernels, cooked
2
tablespoon
jalapeno chile, chopped
1
each
onion, red, diced fine
2
tablespoon
vinegar, cider
1
tablespoon
basil, diced
Directions:
In small saucepan, place olive oil, pepper, garlic, rosemary and thyme. Over low heat, bring to a very warm stage (do not boil). Remove from heat and cool. Brush mustard over chicken, pour marinade over chicken, cover and marinate overnight in refrigerator.
Remove chicken from oil and shake off any excess. Place on prepared grill, skin side down, about 6 inches from heat. Grill over medium heat about 12 minutes, turning once.
To prepare Corn and tomato Salsa, in food processor, coarsely chop tomatoes which have been cored and seeded. Stir in 1-1/4 cups cooked corn kernels, 2 tablespoons chopped jalapeno chile, 1 finely diced small red onion, 2 tablespoons cider vinegar and 1 tablespoon diced basil. Let stand about 1 hour to blend flavors.

- 2 Chicken Breasts cut into strips (5-6 strips per breast - 100g cooked chicken per wrap)
- 1 tsp Paprika
- 1 tbsp Oregano
- 1 tsp Garlic Powder
- 1 tsp Salt
- 40g Buffalo Sauce (Brand: Sauce Shop)
- 80g Crushed Cornflakes (Brand: Kellogs)
- Season again with 1 tsp paprika, garlic, oregano
- Low Calorie Tortilla Wraps (Brand: Mission Wraps)
- Shredded Lettuce
- Tomato pieces
Buffalo Garlic Sauce
- 100g Fat Free Yogurt (Brand: Milbona)
- 40g Buffalo Sauce (Sauce Shop)
- 1/2 tsp parsley (fresh or dry)
- 1/2 tsp Garlic Powder or 1 garlic clove minced
- 1/2 tsp salt & pepper

Important Notes
- Add cooking spray to the chicken before cooking
- You can air fry for 12 mins at 400F/200C
- If the crumbs don’t stick well to the chicken, get a bowl with one whisked egg and use as a binder

Grilled Salsa Fresca Chicken
Perfect for a warm summer night, Chef Billy Parisi's Grilled Salsa Fresca Chicken comes together quickly and is a great way to pack veggies and protein into one main dish with just the right amount of zest and tang.
Grilled Salsa Fresca Chicken
• 5 vine-ripe tomatoes, seeded and medium diced
• ½ red onion, peeled and small diced
• 2 jalapeños, seeded and small diced
• 2 Tbsp. fresh cilantro, chopped
• 1 ½ Tbsp. red wine vinegar
• Juice of ½ lime
• 2 Tbsp. olive oil
• 2 ears of shucked corn
• 4 7-9-oz.boneless skinless chicken breasts
• ¼ cup crumbled queso fresco
• Salt and pepper, to taste
Instructions
1. In a medium size bowl, mix together the tomatoes, onions, jalapeños, cilantro, red wine vinegar, lime juice, salt and pepper until combined. Set aside.
2. In a grill pan over medium heat, add in the olive oil and cook the shucked corn for 3-4 minutes per side or until lightly browned.
3. Trim the corn, add the cooked kernels to the salsa and mix until combined. Set in the refrigerator to keep cool.
4. Season the chicken breasts on both sides with salt and pepper and in the same pan over medium heat with olive oil. Add the chicken and cook for 5-6 minutes per side or until completely cooked through and grill marks have formed.
5. Remove the chicken and serve with the corn salsa fresca and queso fresco.
