Basil and Mint Marinated Grilled Chicken Breasts
serves 4
This is a super simple summery recipe for grilled chicken. I use the vinaigrette from my Grilled
Watermelon, Feta and Arugula salad as the marinade.
Now how Easy Breezy is that???
4 skinless, boneless chicken breasts - pounded to an even thickness of approx 1/2 -3/4 inch
2 tablespoons fresh lime juice
2 tablespoons white wine vinegar
2 teaspoons honey
2 teaspoons fresh thyme, chopped
1 small shallot, minced
1 serrano chile, stemmed and seeds removed, minced
3/4 cup olive oil
salt/pepper to taste
In a small bowl combine the lime juice, vinegar, honey, thyme, shallot and serrano and stir to
combine. Whisk in the olive oil and season with salt and pepper.
Place your chicken breasts in a couple of plastic ziplock bags or a glass pyrex. Pour marinade
over and turn to coat. Let sit up to 30 minutes.
Heat your grill to medium. Coat with cooking spray and place chicken on the grill. Cook for
apprx 2-3 minutes per side, depending on how thick you pounded the chicken. These guys will
cook fast…do not overcook.
Remove to a platter and serve with my Grilled Watermelon Salad.

Originally aired as part of the Spring Picnic episode on the Food Network, April 7th, 2007.
Ingredients:
6 boneless, skinless chicken breasts
1/2 cup frozen raspberries, thawed (recommended: Dole)
1 cup raspberry vinaigrette (recommended: Annie's)
1/4 cup raspberry vodka, optional
1/4 cup finely chopped fresh mint leaves
Fresh mint sprigs, for garnish
Fresh raspberries, for garnish
Directions:
Rinse and pat dry chicken breasts with paper towels. Place in large zip-top bag. Add raspberries, vinaigrette, vodka, if using, and chopped mint. Squeeze air out and seal bag. Gently massage the bag to mash raspberries. Marinate in the refrigerator for 1 to 4 hours.
Preheat grill to medium-high and oil the grates.
Place the chicken breasts on the grill and cook for 4 to 6 minutes per side. Remove from grill and place on serving platter. Garnish with fresh mint sprigs and fresh raspberries.

Raspberry Balsamic Baked Chicken
This recipe for Raspberry Balsamic Baked Chicken is so tasty! A great way to use up your raspberries or a fabulous excuse to buy them! I do both. Once my raspberry bushes start to produce I use them and when I feel like making this delicious chicken dinner in the off season I just pick some raspberries up at the market! We believe that raspberries and chicken go beautifully together. The sauce is fantastic and raspberry fans will have to give this recipe a try!
Grilled Chicken & Berry Salad
A summer salad never looked so sweet!

INGREDIENTS
½ cup olive oil
1/3 cup balsamic vinegar
2 tsp.. Dijon mustard
1 tsp. honey
1 clove garlic, minced or ½ tsp. garlic powder
salt and pepper, to taste
2 chicken breasts
4-6 cups spring greens
1 cup crumbled feta or gorgonzola
½ cup blueberries
½ cup sliced strawberries
½ cup blackberries
¾ cup candied pecans or walnut
Combine olive oil, balsamic, mustard, honey, garlic and salt and pepper in a mason jar. Cover and shake well. Place chicken breasts in a zip top bag and add half of the dressing, Marinate at least 2 hours or overnight.
Preheat grill to medium high heat (400°F). Place marinated chicken breasts on grill, close lid and cook for 7 minutes. Turn chicken and cook for another 7-10 minutes, until cooked through. Let rest for 5 minutes.
While chicken is resting, combine lettuce mix, feta, berries and candied nuts. Slice chicken and add to salad. Drizzle with dressing, toss and serve. Serves 4-6.

Raspberry Chipotle Chicken Whangs
Sticky, sweet, spicy, it doesn't get much better than this. And It's easy peasy.Just take a jar of raspberry preserves, 1/4 cup of chipotle pepper sauce,1 tablespoon of red wine vinegar,1 tablespoon of lemon juice, cook it up and slather it on chicken, pork, ribs, or what have you! you will need
1 jar (12 ounces) Raspberry preserves
1/4 cup chipotle pepper sauce
1 table spoon red wine vinager
1 table spoon lemon juice
combine all ingredients, marinade chicken for 1 hour
grill chicken on indirect heat basting with reserved sauce.
