How To make Hazelnut Apple Pancakes
1 1/4 C Flour
1/4 C Hazelnuts
toasted,
:
finely ground Pinch Salt 2 Tsp Baking Powder
1/2 Tsp Baking Soda
1 Egg Beaters. 99% Egg Substitute or equiv to 1 egg
1 1/3 C Nonfat Milk :
or buttermilk
1/4 C Applesauce
1 lg Granny Smith Apple -- peel, dice
1/2 tsp Vanilla
NOTE: Recipe adjusted from the original to lower the fat content. Original recipe called for 1/3 C hazelnuts - I used 1/4 C. It also calls for 2 T butter, melted (optional), I chose to omit it or in the future to use Wonderslim instead of the butter.
NOTE: To toast hazelnutes - bake on sheetpan till golden brown and hull starts to break off. Rub hull to remove. Grind to nice fine meal.
In bowl put flour, hazelnuts, baking powder, baking soda, applesauce, egg beaters, nonfat milk, and vanilla. Stir till it comes together.
Add apple or any fruit you prefer.
Can make any size you want. When top bubbles flip them over.
Makes about 1 dozen.

200g/1 1/2cups hazelnuts
100g/1/2cup light brown sugar
10g/2tsp vanilla sugar
100g/7tbsp melted butter
5 eggs at room temperature
5g/1tsp baking powder
15g/1tbsp unsweetened cocoa powder
The zest of a lemon
A pinch of salt
For the filling:
700g/8 apples
300ml/1 1/2 cups water
100g/1/2cup light brown sugar
60g/4tbsp starch
90ml/6tbsp water
15ml/1tbsp rum
The zest and the juice of a lemon
Topping:
300ml/1 1/2cups heavy cream
30g/2tbsp sugar
10g/2tsp cream of tartar
Unsweetened cocoa powder

How to Make Apple Pancakes (Episode 39)
This is another stellar variation of our gluten-free, dairy-free pancakes. We use homemade apple butter to drive the apple flavor. Getting the right combination of gluten-free flours can be difficult, but after years of perfecting this recipe, we've got this one dialed in just right.
Recipe for Apple Pancakes
3 eggs
½ cup apple butter
1 ¼ cup soy milk (or other non-dairy milk alternative)
½ cup almond flour
½ cup rice flour
½ cup sorghum flour
3 TB dark brown sugar
¾ tsp xanthan gum
½ tsp salt
2 TB baking powder
2 TB oil
½ tsp ground cardamom
½ tsp ground cinnamon
½ tsp ground nutmeg
Steps for Apple Pancakes
1. Mix the eggs, apple butter, and milk.
2. Add the flour. Use a sifter.
3. Add the remaining ingredients.
4. Mix the batter very well.
5. Let the batter rest in a mixing bowl for 20 minutes. This allows the batter to hold its moisture and not become dried out once it cooks.
6. Preheat the electric griddle to 315 degrees F. Lightly oil the griddle before cooking AND between each round of pancakes.
7. Ladle batter onto the griddle. The batter will be thick. Level each pancake with a pastry knife or small spatula.
8. Flip the pancakes when the underside is brown enough to your liking. Note: The pancakes will not bubble on top as a glutinous pancake would.
9. Remove the pancakes and repeat the process until you use all of your batter.
