Ingredients:
Biscuit Base:
85g biscuit
30g unsalted butter(melted)
Cheesecake batter:
300g cream cheese
40g sugar
50g condensed milk
10g vanilla extract
15g cake flour
150g pumpkin puree
110g plain yogurt
2 egg
Pour hot water into the larger baking pan to a depth of about 2cm-3cm. Preheat the oven to 325°F/160°C. Bake the cake in a water bath for 50 minutes. After baking, use a towel to leave a gap between the oven door and let it sit for 1 hour.
Topping:
110g cream cheese
30g sugar
50g milk
10g lemon juice
Sprinkle some lemon zest on top

2 tbsp (30g) sugar
1/4 cup (60g) unsalted butter , melted

1/4 cup (30g) all-purpose flour
Crisp Topping
1/2 cup (50g) oats
1/2 cup (65g) flour
1/4 cup (60g) butter , melted
1/3 cup (70g) sugar
Cream Cheese Filling
25 oz (700g) cream cheese , room temperature
1/2 cup (100g) sugar
1/2 tsp (2g) salt
lemon zest from 2 lemons
1 tsp (5g) vanilla extract
3 large eggs , room temperature
2/3 cup (160g) sour cream
1 tbsp (10g) flour

INGREDIENTS:
Cottage cheese 5% - 500g.
1 egg
sour cream or yogurt 1-2 tablespoons, the amount depends on how fat your cottage cheese is.

I don't use sugar. I have 1 teaspoon of sweetener. I usually use a mixture of erythritol, sucralose and stevia, it is 5 times sweeter than regular sugar and have 0 calories.
And little salt to balance the taste.
Raisins and cranberries optional (about 100 g) You can use any dried fruit or live berries or jam. Or don't add anything.
We bake, as always, in a preheated oven 180 ℃ (356 ℉) for 40 minutes, to blush)
At first it will rise, but when it cools down, it will settle. This cheesecake is incredibly tender and just melts in your mouth when warm. But to get it out of the mold warm and increase will not work)) It is possible to cool, cool in the refrigerator for 1-2 hours. and then can be laid out from the form.
