How To make Hollandse Kippesoep (Spiced Chicken Soup)

4 lb Chicken, cut in pieces
1 Onion, peeled
4 Cloves, whole
1/2 ts Mace
1/4 ts Pepper
2 Celery stalks, cut in
-chunks 2 Bay leaves
1 1/2 ts Salt
1/2 ts Thyme
1/2 ts Rosemary
4 Sprigs parsley
2 lg Carrots, cut in chunks
1/4 lb Vermicelli pasta
Chopped fresh parsley In the 1600's when Amsterdam was a booming commercial centre, the Dutch East India Company brought pungent spices, such as nutmeg, cinnamon and cloves, to Holland. These spices linger on in Dutch cooking. If mace is not available, nutmeg can be substituted. In a large pot, place chicken. Pour in enough boiling water to cover; bring to a boil over high heat. Remove chicken to a clean pot. Stud onion with cloves and add to chicken along with bay leaves, 1/2 ts salt, thyme, rosemary, mace, pepper, celery, parsley sprigs and carrots. Pour in 12 cups cold water. Bring to a boil over high heat. Reduce heat to low and simmer, covered for 5 hours, or until meat comes away from the bones. Let cool and skim off fat. Strain through cheesecloth lined sieve. Remove meat from bones, chop and set aside. Return chicken stock to a clean pot and bring to a boil. Add vermicelli. Cook for 5 minutes. Return chicken and remaining salt to pot. Cook just until heated through. Taste and adjust seasonings. Garnish with chopped parsley. From Canadian Living Nov/93

Chicken soup 101

This is not a recipe. Here's some general guidance for making a chicken soup:
Buy a whole chicken and a roughly equal quantity of vegetables (by raw weight). Any vegetables are fine but definitely get some form of onion in there. Dry noddles or any other dry grains are nice, but you won't need much because of how much they expand during cooking. Get whatever spices you want, but turmeric makes chicken soup look especially pretty. Maybe buy fresh herbs for garnish, and/or a little lemon to squeeze in.
Put your chicken in a big pot, along with any giblets that came with it. If you have any old aromatic vegetables (onions, carrots, celery, etc) hanging around that aren't super good anymore, you could throw those in but I wouldn't waste good fresh veggies on this step. Cover with water, bring to a boil, reduce to a simmer and cook until the chicken is fall-apart tender, 1-2 hours.
While you're waiting, cut up all your vegetables. Remember they'll shrink when cooking, so cut the chunks a little larger than how you want them.
Pull the chicken out and let it cool. Fish or strain out any remaining inedible solids. Dump in the vegetables along with a couple pinches of salt (be conservative — you can add more to taste later) and simmer until they're soft, 30-60 minutes. If you need to add more water to keep everything submerged, that's fine, but keep in mind the veg will release a lot of water as it cooks. You can always add more later.
If you're using dry noodles or rice or some such, throw that in when you're about 30 minutes from the end. Put in less than you think you'll want — it'll expand 2-3x as it cooks.
While you're waiting, pick all the meat off of the chicken — using your fingers will allow you to feel for any bones, cartilage or slimy bits you don't want to eat. (If you want, you can brown all these scraps in the oven and then simmer them for a second stock you can use later.) Roughly chop through your pile of picked meat so that you won't have any super-long strings of shredded chicken in the final soup. Put the meat back into the soup before you taste for seasoning.
Taste for seasoning. Add salt and any spices you like to taste. You could also stir in some fresh herbs and maybe a little lemon juice (or vinegar) to taste, or you could let people do that in their individual bowls.
Groentesoep met kip/Vegetable soup with chicken/Soupe de légumes au poulet

1 tl. Curcuma

Warm water
Kruiden:
2 teentjes knoflook
1 tl. Curcuma
1 tl. Zout
1 tl. Peper
Voor de soep te binden:
1 eigeel
1 El. Maizena
1 el. Citroensap
1 tl. Zout
1 tl. Peper
Ingredients:
300 g chicken

1 carrot
1 zucchini
1 onion
2 spring onions
1 bouillon cube
1 tsp. salt
1 tsp. Pepper
1 tl Curcuma
For the chicken:
To clean:
4 Tbsp vinegar
2 Tbsp. Lemon juice
Hot water
Spices:
2 garlic cloves
1 tsp. Curcuma
1 tsp. Salt
1 tsp. Pepper
For the soup to thicken:
1 egg yolk
1 Tbsp. Cornstarch
1 tbsp. Lemon juice
1 tsp. Salt
1 tsp. Pepper
Ingrédients :
300 g de poulet
1 poireau
1 carotte
1 courgette
1 oignon
2 ciboules
1 cube de bouillon
1 cuillère à café de sel
1 cuillère à café de poivre

Pour le poulet :

Ingrediënten voor 8 personen:
- 1 ui
- 3 tenen knoflook
- 2 centimeter verse gember
- 5 eetlepels zonnebloemolie
- 2 theelepels sambal oelek
- 1 liter heet water
- 3 paddenstoelenbouillon-blokjes
- 250 gram nasi groente (of bami groente)
- 2 theelepels gedroogd citroengras
- 400 gram champignons
- 175 gram pindakaas (6 eetlepels)
- 3 eetlepels ketjap manis
- 3 theelepels gemalen koriander
- sap van 0,5 citroen
- 1 rode peper (als die al niet bij de nasi groente zit)
