CHICKEN KALI MIRCH | BLACK PEPPER CHICKEN RECIPE | MURGH KALI MIRCH

Ingredients for Chicken Kali Mirch:
- Chicken, large pieces with bones - 500 gms
For the Marination:
- Salt- 1 tsp
- Crushed Black Pepper- 1 tsp
- Lemon Juice- 2 tsp
Onion-Cashew Paste: (To be fried and then made into a paste)
- Onion, sliced- 2 small (100 gms)
- Ginger, chopped- 1” piece (8-9 gms)
- Garlic cloves- 6-7(8-9 gms)
- Green Chillies- 2-3 (8-9 gms)
- Cashew nuts- 8
Whole Spices:
- Green Cardamom- 3
- Cloves- 3
- Cinnamon- 2 pieces
Other Ingredients:
- Whisked Yogurt- 3 tbsp whisked and then 3 tbsp water added
- Garam Masala Powder- 1/2 tsp
- Crushed Pepper- 1 tsp
- Kasuri Methi (Fenugreek Leaves)- 2 tsp
- Salt for seasoning- 1/2 tsp
Preparation:
- Slice the onions, peel the ginger and garlic & chop the ginger. Cut the green chillies to pieces.
- Heat 1.5 tbsp oil in a pan and add the sliced onions. Fry on medium heat for 4 mins till the onions are soft and translucent.
- Add the chopped ginger and garlic and keep frying on medium heat for 1 min.
- Now add the cashew nuts and cut green chillies. Mix and fry on low heat for another minute.
- Remove onto a plate and allow to cool.
- To blend, add the items to a blender/grinder and coarse grind it. Now add 3 tbsp water and blend it into a smooth paste.
- Whisk the curd/plain yogurt till smooth and then add 3 tbsp water. Give a mix and set aside.
- Dry roast the Kasuri Methi, set aside and crush it with your hand.
Process:
- Heat 2 tbsp oil in a pan and place the marinated chicken pieces side by side. Fry on high heat for 2 mins and then turn and continue to fry for 2 mins on the other side.
- Continue to fry on medium heat for another 2-3 mins turning the chicken pieces till the pieces are uniformly browned.
- Now take another pan and heat 2 tbsp oil.
- Add the whole spices and allow it to splutter.
- Give a stir and keeping the heat on low, add the paste blended earlier.
- Stir and fry on low heat for 6-7 mins till oil separates.
- Add the fried chicken pieces, mix and fry on medium to low heat for 2-3 mins.
- Reduce the heat to low and add the whisked curd/yogurt (mixed with water), the garam masala powder and salt to season.
- Stir and cook on low heat for 2-3 mins till oil separates.
- Now add 150 ml water, mix and cover & cook on low heat for 10 mins till chicken pieces are tender.
- Open the lid and sprinkle the crushed pepper and Kasuri Methi. Mix and simmer on low heat for 2-3 mins till oil separates.

Ingredients for Chicken Karahi:
(Tsp- Teaspoon; Tbsp- Tablespoon )
Chicken - 500 gms (small curry cut pieces with bones)
For frying chicken:
- Salt- 1 tsp
- Red Chilli Powder- 1 tsp
- Pepper Powder- 1/4 tsp
- 4 tbsp oil
Spice Powders:
- Red Chilli Powder-1 tsp
- Black Pepper Powder- 1/4 tsp
- Garam Masala Powder- 1/2 tsp
Other Ingredients:-
- Ginger Garlic paste- 1.5 tsp
- Onions, sliced-2 medium (150 gms)
- Green Chillies, sliced- 3
- Coriander leaves fine chopped- 2 tbsp+ 2 tbsp for garnish
- Red Tomatoes, sliced- 3 medium (around 200 gms )
- Salt - 1/4 tsp (while frying onion)+ a pinch to season at the end
- Ginger julienned - 1 tbsp
- Butter - 1 tbsp
Preparation:
- Wash and pat dry (or strain the water) the chicken pieces
- Fine slice the onions and slice the red tomatoes.
- Slice the green chillies, fine chop the coriander leaves and julienne the ginger.
Process:
- In a karahi, heat 4 tbsp oil and then add the chicken pieces. Also add the salt and spice powders specified while frying. Fry for 5 mins on high heat till browned. Now cover & cook on low heat for another 10 mins.
- Remove from heat and set aside.
- In the same oil add the sliced onions and fry on medium heat for 8-9 mins. Add 1/4 tsp salt while frying. Now add the ginger garlic paste and fry on low heat for 2 mins.
- Add the spice powders & a splash of water and fry on low heat for 2 mins.
- Now add the fried chicken pieces, sliced green chillies and fine chopped coriander leaves. Mix and sear for 2-3 mins till well combined and then add the sliced tomatoes. Add a pinch of salt.
- Mix and fry for 2 mins. Now cover & cook on low heat for 10 mins
- Add the ginger juliennes and chopped coriander leaves. Fry 2 mins on low heat.
- Lastly add 1 tbsp butter. Mix and serve.

LEMON CHICKEN
Preparation time 10 minutes

Ingredients
For Primary Marination
1 kg Chicken (thigh & drumstick) चिकन
Salt to taste, नमक स्वादअनुसार
2 tbsp Lemon juice, नींबू का रस
For Ginger Garlic Paste
4 no. Green chillies, less spicy, हरी मिर्च
1 inch Ginger, roughly slice, अदरक
7-8 Garlic cloves, roughly chopped, लहसुन
1 tsp Oil, तेल
Salt to taste, नमक स्वादअनुसार
For Second Marination
Primary Marinated Chicken, मैरिनेटेड चिकन
Prepared Ginger Garlic Paste, तैयार किया हुआ अदरक लहसुन का पेस्ट
⅓ cup Curd, beaten, दही
Salt to taste, नमक स्वादअनुसार
For Tempering
1 ½ tbsp Oil, तेल
2 Bay leaf, तेजपत्ता
2 Green cardamom, हरी इलायची
Marinated Chicken मैरिनेटेड चिकन
¼ tsp Turmeric powder, हल्दी पाउडर
Little water, पानी
1 tsp Cornstarch slurry, कॉर्नस्टार्च का घोल
1 tsp Lemon juice, नींबू का रस
few Lemon zest, नींबू के छिलके
1 tbsp Coriander leaves, chopped, धनिया पत्ता
For Masala
15-20 no. Black peppercorns, काली मिर्च के दाने
½ tsp Cumin seeds, जीरा
5 no. Green cardamom, हरी इलायची
1 Clove, लौंग
A pinch of fenugreek seeds, मेथी दाना
Salt to taste, नमक स्वादअनुसार
For Garnish
A pinch of Prepared Masala, तैयार किया हुआ मसाला
Coriander sprig, धनिया पत्ता
Lemon wedge, नींबू की फांक
Process
For First Marination
In a bowl, add chicken, salt to taste, lemon juice and mix it well. Rest it for 15-20 minutes.
Squeeze out the excess water from the chicken.
Keep it aside for further use.
For Ginger Garlic Paste
In a bowl, add green chillies, ginger, garlic, oil and salt to taste.
Transfer it to a grinder jar and grind into a smooth paste.
Keep it aside for further use.
For Second Marination
In the same bowl, add primary marinated Chicken,prepared ginger garlic paste, curd, salt to taste and mix everything well.
Keep it aside for further use.
For Tempering
In a handi or lagan, add oil, once it's hot, add bay leaf, black cardamom and let it splutter.
Add marinated chicken and saute it for a minute.
Cover it with the lid and cook it for 7-8 minutes or until tender on moderate heat.
Add turmeric powder and saute, add little water, cornstarch slurry, lime juice, lemon zest and get a quick boil.
Finish it with some coriander leaves.
Transfer it to a serving dish and sprinkle some prepared masala.
Garnish it with coriander sprig and lemon wedge.
Serve hot.
For Masala
In a small pan, add black peppercorns, cumin seeds, green cardamom, cloves, fenugreek seeds, salt to taste and dry roast them on moderate heat for a minute.
Transfer it to a grinder jar and make a coarse mixture.
Keep it aside for further use.
