Betty's Hot German Potato Salad
Betty demonstrates how to make Hot German Potato Salad. This dish is composed of sliced, cooked potatoes with a dressing of vinegar, crisped bacon, onion, parsley, and spices. It has an extra-special tangy taste!
Hot German Potato Salad
1 ½ pounds potatoes (about 4 medium-sized potatoes)
1 medium onion, thinly sliced
8 strips of bacon, cooked until crisp, and then crumbled
1/3 cup white vinegar
2 tablespoons flour (You may use plain or self-rising flour.)
1 ½ teaspoons salt
½ cup fresh-chopped parsley
½ cup water
3 teaspoons sugar
¼ teaspoon ground black pepper
In a large skillet, cook 8 strips of bacon until crisp. Drain off as much of the bacon grease as possible. Add a medium sliced onion to the skillet and cook over low heat for 2 minutes. Add 1/3 cup vinegar, 2 tablespoons flour, 1 ½ teaspoons salt, ½ cup chopped parsley, ½ cup water, 3 teaspoons sugar, and ¼ teaspoon black pepper. Return to stove and cook mixture until just slightly thick. Carefully fold in cooked, sliced potatoes, until the potatoes are well-coated with the thickened mixture. Remove from heat and place in a nice serving bowl. Serve while warm. This is a great accompaniment for anything from sandwiches to steak or chicken. Enjoy!!! --Betty

Authentic German Potato Salad
3 cups diced potatoes
4 slices bacon
1 small onion, diced
1/4 cup white vinegar
2 tablespoons water
3 tablespoons white sugar
1 teaspoon salt
1/8 teaspoon black pepper
1 tablespoons chopped fresh parsley
Place the potatoes into a pot and fill with enough water to cover. Bring to a boil and cook for about 10 minutes or until easily pierced with a fork. Drain and set aside to cool.
Place the bacon in a large deep skillet over medium-high heat. Fry until browned and crisp, turning as needed. Remove from the pan and set aside.
Add onion to the bacon grease and cook over medium heat until browned. Add the vinegar, water, sugar, salt, and pepper to the pan. Bring to a boil; then add the potatoes and parsley. Crumble in the bacon. Heat through, then transfer to a serving dish. Serve warm.

1 kilo of hard-boiled potatoes
about 60 grams of streaky bacon
1 onion
0.5 liter broth
4 tablespoons of oil
3 tablespoons white wine
2 radishes
1 bunch of chives
Cook the potatoes for about 20 minutes, drain, quench, peel.
Hot slice
Fry the bacon and onions until glassy and pour over the potatoes
Heat broth, mix with vinegar and oil and salt and pour over the potatoes.
Finely chop radish and chives and fold in.
Season with salt and pepper.

INGREDIENTS
• 1.4kg Yukon gold potatoes, sliced
• 6 slices of thick cut bacon, cut into lardons
• 1 onion, chopped
• 80mL apple cider vinegar
• 80mL water
• 50g granulated sugar
• 15mL stone ground mustard
• 15mL corn starch and 60mL water whisked into a slurry
INSTRUCTIONS
1. Add the potatoes to a large pot and cover with water by about an inch. Bring to a boil and cook until the potatoes are just starting to get tender, 5-10 minutes. Drain, run under cool water to stop the cooking, and set aside.
2. While the potatoes boil, add the bacon to a cold dutch oven. Now set the dutch oven on the stove over low heat. Cook until the bacon is crisp and all the fat has rendered, approximately 30 minutes.
3. Remove the cooked bacon with a slotted spoon, leaving the fat in the dutch oven. Reserve the fried bacon. Add the onion and continue cooking over low heat until the onions turn golden brown, 15-20 minutes.
4. Once the onions have browned, add the vinegar, water, and sugar. Whisk until the sugar is fully dissolved. Be careful! The liquids will cause a great deal of splattering in the dutch oven.
5. Whisk in the mustard.
6. Add the cornstarch slurry and whisk to combine. Continue cooking, brining up to a boil, until the sauce has slightly thickened.
7. Add the potatoes in batches, turning in the sauce to coat with each addition. Continue cooking until the potatoes are heated through and tender.
8. Remove from heat, top with the bacon, and serve.

Hot German Potato Salad! Noreen's Kitchen Family Favorite!
Greetings! Here is a recipe from my Nanny's recipe box. One that she taught me how to make. I have been eating this salad for as long as I can remember! It is what I grew up knowing as German potato salad and while there may be many different varieties of German potato salad, this is the one that is my family's favorite.
Sweet and tangy with lots of meaty red potatoes, salty bacon and sweet onion. This is the perfect combination. We only ever had this on special occasions when I was growing up. My Nanny was the only person who would make it. My mom never really liked it so the opportunities to have it were few and far between. This dish is too delicious to save for weddings, funerals, christenings and baptisms. This needs to be made for game night, barbecue night and even just because it is Tuesday.
We seem to save these things we love for only high holidays or mourning. Why not take out the good china and serve up something that you love on a Thursday just because you can? Don't waste another minute! Make this salad and enjoy a happy memory from my childhood or maybe even your own!
