Ingredientes:
Galletas Lotus ( o digestivas )
90 gramos de mantequilla
900 gramos de queso filadelfia o cualquier otro queso similar
1 taza, equivalente a 250 gramos de azúcar
3 cucharadas soperas de harina común,
1 cucharadita de zumo de limón
2 cucharaditas de esencia de vainilla
200 ml de yogur griego
3 huevos enteros + 1 yema de huevo
2 láminas de gelatina
Maracuyá o fruta de la pasión, unas 5 piezas
4 cucharadas de azúcar blanca
jugo de medio limón
2 o 3 cucharadas de agua
Molde desmoldable 26 cm de diámetro
Horneamos a 200 grados los primeros 10 minutos y luego bajamos a 190 grados y horneamos por 30 minutos más.

Irresistible EGGLESS PINEAPPLE PASTRY Recipe | Easy Homemade Dessert | The Cupcake Confession

????Learn how to bake 45+ Irresistibly Unique Eggless Cheesecakes made without Water Bath in flavours you have never even imagined and using everyday simple ingredients! All lessons are recorded and you can watch them at your convenience:
Eggless Pineapple Pastry:
✅For macerating the pineapples
????230 grams pineapple (weighed after removing the core), diced into tiny pieces
????2 tablespoons caster sugar
✅For the Cake sponge
????175 grams warm milk
????1 teaspoon vinegar
????175 grams all purpose flour
????100 grams caster sugar
????1 teaspoon baking powder
????1/4th teaspoon baking soda
????Pinch of Sea salt
????55 grams neutral tasting vegetable oil
✅For the Whipped Cream:
????200 grams dairy free whip topping, whipped to stiff peaks
Process:
1. Macerate pineapple pieces by adding caster sugar. Mix well, cover and leave at room temperature for at least 2 hours. You can also make this the night before but refrigerate it if you do that.
2. Preheat oven to 180 Celsius.
3. Grease and line a 15”x10” baking tray with parchment paper.
4. In a bowl, add warm milk and vinegar to make instant buttermilk
5. Into this, add all purpose flour, caster sugar, baking powder, baking soda, sea salt and neutral tasting edible vegetable oil.
6. Whisk until well combined and pour into the prepared baking tray. Spread out evenly and bake at 180 Celsius for 10 minutes.
7. Once baked, take the cake out and let it cool completely.
8. Whip the dairy free whip topping to stiff peaks
9. Trim the edges and divide the cake into 3 equal parts.
10. By now the pineapples will have macerated, leaving natural pineapple juice. Transfer that to a cup and soak the sponges in that juice.
11. Now add a generous dollop of whipped cream, spread out evenly.
12. Top with macerated pineapple pieces and cover with some more cream and layer up the cake.
13. Cover the cake in some more whipped cream and make swirls on top.
14. Top off with the rest of the pineapple pieces and the refrigerate for at least 1-2 hours more before slicing
15. Trim the edges and divide into 8 equal portions.
16. Serve and enjoy!

Eggless Tiramisu Mousse Cake|Step-by-Step Recipe|Irresistible Dessert Delight|The Cupcake Confession

Tiramisu Mousse Cake:
✅For the Sponge cake:
????1/2 teaspoon custard powder
????130 grams milk, room temperature
????1 teaspoon vinegar
????100 grams all purpose flour
????65 grams caster sugar
????1/2 teaspoon baking powder
????1/4 teaspoon baking soda
????Pinch of Sea Salt
????35 grams neutral tasting oil
✅For the Coffee Soak:
☕️2 tablespoons instant coffee powder
☕️50 grams warm water
✅Mascarpone Mousse:
????200 grams mascarpone cream cheese, room temperature
????80 grams icing sugar
????120 grams whipping cream, chilled and whipped to stiff peaks
Process:
1. Preheat oven to 180 C.
2. In a bowl, add custard powder.
3. Pour warm milk, whisk and add vinegar. Whisk again, the milk will curdle giving you instant custardy buttermilk
4. Into this, add the all purpose flour, baking soda, baking powder, sea salt, caster sugar. Whisk until well combined.
5. Add the oil and whisk again until a smooth, velvety batter forms.
6. Pour into a well-greased loose-bottom 6-inch cake tin.
7. Bake in the oven at 180 Celsius for 10-12 minutes or until a skewer / knife / toothpick inserted in the centre of the cake emerges clean.
8. While the cake bakes and cools, make the coffee soak by adding warm water to instant coffee powder.
9. When the cake has cooled, un-mold it and level it with a knife.
10. Soak with the coffee soak you made and pop the tin back on and keep aside.
11. To make the Mascarpone mousse, whip room temperature mascarpone on medium speed of electric beaters for 30 seconds - 1 minute.
12. Sift in icing sugar and whip for 1 minute.
13. Whip whipping cream to stiff peaks.
14. Add a little of the whipped cream to the mascarpone mix first and mix vigorously to loosen the mix. Then gently fold in the rest of the whipped cream.
15. Transfer to a piping bag and pipe on top of the coffee soaked cake.
16. Smooth out the top and refrigerate overnight or preferably for 24 hours to develop flavours.
17. Dust with cocoa powder before unmolding the cake.
18. Slice and serve!
