How To make Italian Meatballs Pasta Machine
1 1/2 Pounds Lean ground beef or turkey
1/2 Cup Onions
finely diced
1/3 Cup Celery leaves :
finely minced
2 Tablespoons Green pepper minced
1 Teaspoon Salt
1 Tablespoon Italian seasoning
1 Garlic clove :
minced
3 Cups Bread crumbs
2 Eggs -- beaten
Use meatball/bagel die. Put ground beef, salt, pepper, spices, celery, onion, green epper and about one cup of bread crumbs in mixing bin. Mix lightly. Add eggs and extrude. Ad bread crumbs by the tablespoonful through the top grates as necessary to keep the mixture extruding and from bunching up around the blades. Extrude in 1 1/2" pieces and roll each into a ball. Saute in a pan with 2 tb. olive oil until browned, or put on broiler rack and bake in a 350~ oven for about 30 minutes or until browned and firm. The oven method is most efficient if doing a large quantity for the freezer. If to be frozen, cool and freeze in zip-loc bags or rigid containers in meal-sized batches. To serve with pasta, add to Spaghetti Sauce (bottled or homemade) and simmer for 30 minutes. From: Popiel pasta machine recipes

Juicy MEATBALL RECIPE - How to Cook Italian Meatballs
Our go-to Meatball Recipe. Find out our secrets to big and juicy homemade meatballs. They are make-ahead and freezer friendly which makes them perfect for meal prep.

Ingredients for Juicy Meatballs:
►3 slices white bread (crusts removed), diced
►2/3 cup cold water
►1 lb lean ground beef (85/15 fat content)
►1 lb ground pork
►1/4 cup grated parmesan cheese
►1 large egg
►3 garlic cloves, minced
►2 Tbsp parsley, finely chopped
►1 tsp sea salt
►1/2 tsp black pepper
►2 Tbsp olive oil, to sautee

►Freezing uncooked meatballs:
Prepare the meatballs through Step 5. Arrange in a single layer on a baking sheet and freeze until solid. Transfer the meatballs to a freezer container or freezer bag, and freeze for up to 1 month. (Meatballs can be frozen for longer, but tend to develop freezer burn.) Thaw meatballs in the refrigerator overnight before cooking.
►Freezing cooked meatballs:
Let the cooked meatballs cool completely, then arrange in a single layer on a baking sheet and freeze until solid. Transfer to a freezer container or bag and freeze for up to 2 months. Frozen meatballs can be thawed overnight in the refrigerator or reheated directly from the freezer. Reheat meatballs in a simmering sauce for 10 to 15 minutes or in a warm oven for 10 to 15 minutes.

Italian Meatballs Recipe - The Pasta Queen
Italian meatballs
Let’s make a classic!
— Italian Meatballs
The perfect amount of Italian passion in one bitesized ball!
- 500 g of ground beef
- 100 g of Parmigiano-reggiano (freshly grated)
- 100 g of bread crumbs
- 2 eggs
- 2 garlic cloves
- a bunch of parsley
- Salt
- Pepper
- Extra Virgin Olive Oil
Recipe:
1. In a large bowl, mix the beef, bread crumbs, eggs, garlic, parsley and parmigiano cheese.
2. Add a pinch of salt and a scrunch of pepper.
3. Roll into little one inch, bite sized meatballs. (Gently roll them to get that perfect round shape.)
4. In a pan, drizzle some extra virgin olive oil on a low to medium heat.
5. Place the meatballs in the pan and start shaking the pan so the meatballs are rolling (motion is your friend, it will help the meatballs cook evenly without burning).
6. Add a pinch of salt.
7. After they have the perfect brown crust and you’ve added your Italian passion, place your meatballs on a paper towel and pat dry them to drain any excess olive oil.
8. Plate them and dig in!
Useful tip:
Plate your dish with some fresh parsley for that extra pop of delicious Italian flavor!

I visited il Polpettificio, a restaurant in Bari, Italy that serves thousands of meatballs every day to find out the most traditional way to make meatballs in Italy. Everything from what is the best cheese to use, to what sauce is best to cook them in.
