Jenny's Famous Meatballs
Ingredients:
1 Tablespoon Olive Oil
1 Each Yellow Onion, Diced
1 teaspoon Crushed Red Pepper
2 teaspoons Garlic, Minced
½ teaspoon Kosher Salt (to season the onions)
12 oz E3 Meats, Ground Beef
12 oz Ground Pork
2 Each Eggs, Whipped
1 Cup Parmesan Cheese, Grated
¼ Cup Parsley, Chopped
1 Cup Ritz Crackers, Crushed
½ Cup Water
2 teaspoons Kosher Salt (for ground meat mixture)
2 ½ Cups Hudson BBQ Sauce
Hudson BBQ Sauce:
10 oz Chili Sauce, Heinze
2 Tablespoons Lipton Onion Soup and Dip Mix
9 oz Apricot Preserve
2 teaspoons Dijon Mustard
1 Tablespoon Molasses
3 Tablespoons Red Wine Vinegar
1 teaspoon Fresh Cracked Black Pepper
1 teaspoon Cumin
Method:
1. Combine all and whisk together. Reserve for later use.
Method:
1. Stabilize your grill from 350 - 400F and insert a cast iron griddle or soap stone and top with a cast-iron pan.
2. Once the grill and accessory come to temperature, oil the sear surface, and add the diced onions. Sweat the diced onions for a few minutes, agitating them and not giving them too much color. Next add the garlic and crushed red pepper. Cook together for another 2 minutes. Remove from the grill and transfer to a cool place.
3. In a large bowl, combine the ground meats with eggs, parmesan, parsley, and crushed crackers. Mix thoroughly but gently, then fold in the cooled onion mixture and season with the second amount of salt. Mix then add water and mix thoroughly and gently one last time. (Mixture should look wet)
4. Shape the mixture into 1 ½ - 2 oz balls and refrigerate for 30 minutes or so.
5. Place a clean cast iron pan on the grill surface and allow it to come to temperature. Oil the pan and bring it to a smoking point. Sear the meatballs evenly on all sides then pour the BBQ sauce over top of the meatballs. Use enough sauce to reach ¼” below the top of the meatballs. Close the dome and cook the meatballs until they reach an internal temp of 155F. Gently turn a few times throughout the cook, be sure not to break the meatballs. Remove from the grill and serve from the skillet.

How to Make EASY Air Fryer Meatballs
Air Fryer Meatballs are juicy inside, lightly crispy outside, with yummy Italian seasoning. Use them for spaghetti, subs, and more! ⬇️⬇️⬇️⬇️ CLICK FOR RECIPE ⬇️⬇️⬇️⬇️
✅AIR FRYER MEATBALLS INGREDIENTS:
➤1/3 c grated Parmesan cheese, plus additional for serving
➤1/3 c Italian-seasoned breadcrumbs (whole wheat if possible)
➤1 tbsp dried parsley flakes (or 3 tablespoons finely chopped fresh parsley)
➤1 tsp kosher salt
➤1 tsp Italian seasoning
➤1/2 tsp garlic powder
➤1/2 tsp onion powder
➤1/4 tsp black pepper
➤1/4 tsp red pepper flakes optional
➤1 lb 93% lean ground turkey, chicken or lean ground beef (keep in your refrigerator until the last possible second so it stays very cold)
➤1 large egg
✅FOR SERVING:
Chopped fresh parsley or basil
Grated Parmesan
Prepared pasta sauce
Cooked whole wheat pasta or zucchini pasta
Creamy polenta
Split and toasted hoagie buns
Prepared brown rice
✅DIRECTIONS:
1. Line a baking sheet with parchment paper and keep it handy. To keep the meatballs warm between batches, preheat the oven to 300 degrees F and line a second baking sheet with parchment paper.
2. In a large mixing bowl, add the Parmesan, breadcrumbs, parsley, salt, Italian seasoning, garlic powder, onion powder, black pepper, and red pepper flakes. Stir well to combine.
3. Add the ground turkey. In a small bowl, beat the egg, then add it to the bowl (you also can crack it into an open space in the big mixing bowl and lightly beat it there). With a fork or your fingers, mix lightly just until the ingredients evenly combined, being careful not to compact the meat.
4. Portion the meat and shape into 1 1/2-inch meatballs (you will have about 20 total), then arrange them on the first baking sheet.
5. Preheat the air fryer to 400 degrees F. Generously coat the basket with non-stick spray. Arrange a single layer of meatballs in the basket, ensuring they do not touch so air can circulate (you will need to cook them in batches). Mist the tops with non-stick spray.
6. Air fry the meatballs at 400 degrees F for 7 to 9 minutes, sliding out the basket and using tongs to gently turn the meatballs over halfway through. The meatballs are done when they reach an internal temperature of 165 degrees F on an instant-read thermometer. When a meatball is cut in half, the meat should look fully cooked.
7. Place the first batch of cooked meatballs on the second, clean baking sheet and transfer to the oven to keep warm. Repeat with remaining meatballs.
8. While the meatballs air fry, warm the sauce on the stove and prep any other items you’d like to serve them with them. Enjoy the meatballs hot, topped with the sauce, cheese, herbs, and any other additions.
