????Ingredients
1 1/2 cup red kidney beans
3 cloves garlic
2 Tsp ginger/Optional
1 Tsp pimento
5 cup hot water or cold
2 1/2 cup long grain rice
????Seasonings
1 Tsp salt
1 Tsp all purpose season
1/2 Tsp black pepper
????Herbs
2 stalk Scallions
1 scotch bonnets Pepper
3 Tsp fresh thyme
1 can coconut milk
1 spoon butter
Rice cook for 30 minutes
Peas cook for over a 1 hour

JAMAICAN RICE AND PIGEON PEAS RECIPE????
Ingredients:
1 cup frozen pigeon peas
4-5 cups of water (to cook beans)
1 small onion, chopped
2 scallions, chopped in two
3 garlic cloves
5-8 pimento seeds
1 spring thyme
1/4 green bell pepper
1 scotch bonnet pepper (optional)
½ tsp all-purpose seasoning
½ tsp onion powder
½ tsp garlic powder
1 tbsp unsalted butter or olive oil
Add salt and black pepper to taste
3/4 cup of coconut milk
2 cups long-grain white rice
**Feel free to add seasonings to your taste**

Authentic Jamaican RICE & PEAS, fresh coconut milk
Jamaican Rice & Peas is absolutely tasty, cook down in fresh coconut milk, a whole scotch bonnet pepper. This is just devine!
Ingredients
1 - 1 1/4 cups or 1/2 pound Dried Kidney Beans
1 large coconut ????
1 whole green scotch bonnet pepper
2 pimento peppers (for flavor) cut in half
3 -4 stalks of scallion & thyme
4 gloves garlic chopped
1 tbsp salt
2 tsp mix or all purpose seasoning
2 tbsp brown sugar (optional
3 1/2 cups parboiled rice ( or any rice)
Instructions
Wash kidney beans, then add 2 cups water along without 4 gloves of chopped garlic and put to boil
Break Coconut, cut into small pieces, add to blender along with 4 cups water, blend until smooth
Strain coconut milk, then add to boiling beans, cover under low heat and allow to cook for 1 hour or until beans are fully cooked.
Make stir in between the hour
When beans are cook, add scallion & thyme, whole scotch bonnet pepper, pimento peppers, salt, mix/ all purpose seasoning, and sugar, stir, cover and allow to cook for another 5 minutes.
(Taste and add more salt if needed)
Wash rice and add to pot, mix throughly, bring to a boil, then lower the heat and allow rice to steam for 20-25 minutes or until rice grains are fully cook.
Serve & Enjoy!
*if the rice grains tends to be hard, place a plastic bag or aluminum foil over the pot, cover and allow to steam some more.
*coconut milk in the can, pack or the bar can be use, but should be added when beans are already cooked.

1 Cup peas
1 hard Coconut (blend and stain)
1/4 to 1 tbsp butter
10 grains pimento seed
3 Gloves of garlic (to cook peas)
2 Stalk of escallion
1 Scotch Bonnet pepper
4 Spring Fresh Thyme
1/2 tsp All purpose seasoning for flavor
1 tsp Salt for taste
2 Cups Basmati Rice
Rice and peas is a common Jamaican dish! In Jamaica, the dish is typically called “Rice and Peas”. Most Jamaicans prepare it for Sunday dinner and also for special occasions.
It is an easy and flavorful side dish that brings a fun tropical flair to your meal. This is a must-try recipe guys, it’s so flavorful and delicious ????

I don't know if it's just me, but I can NEVER get coconut rice to work on the stove. Baking is the way to go! Fluffy rice, every time, and no scorched base. TRY IT!
