How To make Jenny's Christmas Cake
10 oz Wholewheat flour
1 1/2 lb Dried Mixed Fruit
4 oz Glace Cherries
2 oz Chopped Walnuts
2 oz Chopped Almonds
2 ts Baking Powder
Nutmeg 1/2 ts Salt
8 oz Butter
5 Eggs (4-6)
3 tb Molasses (2-4)
1 Grated rind of 1 lemon
1 Grated rind of 1 orange
8 oz Demerera Sugar
LOTS of ALCOHOL -about half bottle of rum -or brandy or both 1/4 pt Guiness
Mix the fruit and alcohol together and leave to soak for 3 days minimum. Add cherries and nuts to mixture. Mix flour, baking powder, spices and salt together. Cream the butter, and sugar, when light and fluffy beat in molasses and then eggs one at a time. Fold in half of the flour mixture followed by the fruit and alcohol mixture. Then fold in the remainder of the flour. Bake in lined tin wrapped in newspaper and secure tin with string. Bake at Gas 3 for first two hours then reduce to Gas 2 for a further 90 minutes. When cooked sprinkle cake with alcohol. Keep wrapped in foil and every so often sprinkle with alcohol.

In this video, I will be showing you how to make Sri Lankan special Rich Cake is really Sri Lanka's version of the Western fruit cake. This version is unique for its moistness and rich in flavor. The key to this cake is the finely chopped dried fruits and the low temperature that the cake is baked. Every wedding Party would serve this rick cake in a beautiful wrap. So let me show you how to make this rich cake/Christmas cake step by step.
Ingredients:
250 grams of dates
50 grams of currants
raisins 125 grams
sultana 100 grams
cashew nuts 100 grams
50 grams of green cherries
125 grams of pumpkin preserve(MD brand)
50 grams of chow chow(MD brand)
100 grams of the ginger preserve(MD brand)
strawberry jam 1/2 cup or 150 grams
1 1/2 Tbsp or 1.1 ounces of golden syrup(MD brand)
honey 1 1/2 Tbsp or 1.1 ounce
roasted cinnamon powder 1/4 Tsp
roasted cardamom powder 1/4 Tsp
roasted clove powder 1/8 Tsp
1/2 Tsp of nutmeg powder
almond essence 1 Tbsp + 1/4 Tsp
rose essence 1/4 Tsp
brandy 2 Tbsp or 1 ounce
semolina 250 grams or 1 cup + 1/4 cup + 1/2 Tbsp
butter 125 grams
6 egg whites
room temperature butter 250 grams
sugar 280 gram or 1 cup + 1/8 cup
6 egg yolks
all purposes flour 50 grams or 1/4 cup+ 1 Tbsp
1 1/2 Tbsp of vanilla extract
***Marzipan***
icing sugar 1 1/2 cup or 215 grams
almond powder 167 grams or 1 cup+ 1/3 cup + 2 Tbsp
vanilla 2 Tsp
rose water 1 Tsp
1 egg white

The British Fruit Cake is traditionally served during the Christmas season. Luckily, there is a much simpler version of this cake for the last minute baker, and I call it an Easy Fruit Cake. You may know it as a Boiled Fruit Cake, a War Cake, and/or a Bachelor's Cake. I love a lot of things about this cake. I love that it still uses all the necessary fruit cake ingredients, like dried and candied fruits and ground spices. I love that the batter is so easy to make and you don't need to pull out your stand mixer. And most importantly, I love its flavor and that it can be eaten almost right away. This is one cake that is so good that it begs to be made all year, not just during the Christmas season.

This is my personal favorite do enjoy.
3 cups AP flour ( sieve)
2 cups sugar
4 cups puree fruits ( fermented )
1 cup chunky fruits ( fermented)
1 cup diced fruits ( optional)
6 large eggs ( room temp)
lemon / orange peel OR lime oil
4 dash Angostura bitters
1 cup dark rum
1 tsp pure vanilla extract
2 cups vege oil
1/2 cup fruit jam ( optional)
Spices : 1/2 tsp clove,1/2 tsp cardamom 1 tbs ginger, 1 tbs cinnamon , 1 tbs all spice, 1/2 tbs nutmeg
1 tsp salt
2 tsp baking powder
1/2 tsp baking soda
3/4 cup browning ( as needed)
Makes 2 / 7 cake & 2 / 8 cakes
5 cups liquor to dredge cakes twice.

Non Alcoholic Jamaican Christmas Black Fruit Cake
Merry almost Christmas! Wow, this year has flown back quickly! As you all know I come from a Jamaican background so in this video I made a NON-alcoholic Christmas black fruit cake! I hope you all will enjoy this video and try it out for yourselves!

*THIS IS MEANT FOR A SINGLE CAKE*
Ingredients:
* 6 ounces or 1 & 1/2 cups of flour
* 6 ounces of margarine or butter
* 8 ounces of sugar
* 4 eggs
* 1 pound of raisins
* 1 teaspoon of cinnamon
* 1/2 teaspoon of mixed spice
* 1/2 teaspoon of salt
* 4 ounces of mixed peel
* 4 ounces of cherries
* 1/2 pound of chopped prunes
* 1 cup of wine
* 1 teaspoon of baking powder
* 1 teaspoon of vanilla
* Zest of 1 lemon & lime
* 2 tablespoons of browning
* Sparkling Cider
Directions:
1. Cream butter, sugar & browning until soft and fluffy.
2. Sieve all dry ingredients together.
3. Beat eggs, wine, and milk together.
4. Add egg mixture to creamed butter and sugar.
5. Add fruits. Fruits need to be lightly floured if they are sticky.
6. Add flour and food in. DON'T over-beat this when mixing together.
7. Bake at 350° for 1 & 1/2 - 2 hours.
