Breakfast Skillet Recipe Southwestern Home Fries With Sausage. Quick And Easy Breakfast/Brunch Recipe Idea.
Recipe Details:
Season In Moderation To Taste
Potatoes peeled and diced
Oil
Salt
Black Pepper
Adobo (with pepper)
Onion Powder
Garlic Powder
Cajun Seasoning
Paprika
Cayenne Pepper
McCormick Montreal Chicken Seasoning
MSG (Flavor Enhancer)
Onions (diced)
Red/Green Bell Peppers
Sausage (I used Hillshire Kielbasa Turkey Sausage)
Instructions:
Washing diced potatoes pat dry.
Adding a drizzle of oil and combing.
Adding seasonings mentioned above.
Using medium-high heat to heat skillet.
Combining and placing in a hot skillet.
Frying seasoned potatoes without disturbing, when potatoes start to brown toss and allow browning to take place on the other side.
Adding onions, red/green bell peppers, and combining.
Covering with lid to for a couple of minutes to potatoes to slightly soften.
Adding fried sausages and combining one final time before serving.

Sausages with Peppers and Onions

Ingredients
3 tablespoons extra-virgin olive oil
1 1/2 pounds sausages (spicy Italian, mild Italian, plant-based, etc.)
2 orange bell peppers, seeded and sliced
2 red bell peppers, seeded and sliced
2 yellow bell peppers, seeded and sliced
2 white onions, halved and sliced
Kosher salt and freshly ground black pepper
4 cloves garlic, sliced
1 tablespoon apple cider vinegar
2 tablespoons chopped fresh basil
Directions
Heat a large braiser or high-sided skillet over medium-high heat. Add 1 tablespoon olive oil and swirl to coat the skillet. Once the oil is shimmering, add the sausages and brown on all sides until browned but not cooked through, 5 to 7 minutes. Remove them to a plate and let cool until cool enough to handle, then slice them into 1 1/2-inch pieces. Set aside.
Turn the heat down to medium-low and add the remaining 2 tablespoons olive oil to the skillet. Add the peppers and onions and season with 1 teaspoon salt and 1/4 teaspoon pepper. Cook the peppers and onions, stirring occasionally, until they begin to soften, about 5 minutes. Add the garlic and stir to incorporate. Continue cooking the vegetables over low heat until they’re very soft, beginning to caramelize and have some spots of browning, about 40 minutes. If the vegetables start to look like they’re getting too browned too quickly, add a splash of water to deglaze.
Add the apple cider vinegar and the sausages to the skillet and stir to incorporate. Continue cooking until the sausages are cooked through, 10 to 15 minutes. Turn the heat off.
Garnish with the basil and serve immediately.

Sausage, Pepper and Potato Skillet

Ingredients
3 tablespoons olive oil
1 pound marble potatoes
1 yellow onion, sliced thin
1 orange bell pepper, sliced thin
1 green bell pepper, sliced thin
1 red bell pepper, sliced thin
Kosher salt and freshly ground black pepper
1 pound kielbasa sausage, sliced into 1/2-inch rounds
3 cloves garlic, minced
1 cup amber beer
1 tablespoon grainy mustard
3 cups chopped kale
Fresh herbs, to garnish.
Directions
Heat the olive oil in a large skillet over medium heat. Add the potatoes, onions and peppers, then season with a pinch of salt and pepper. Cook until the onions are translucent and the potatoes begin to brown, 5 to 6 minutes.
Stir in the kielbasa and garlic. Add the beer and mustard, then stir to combine. Cover and cook until the potatoes have softened and the sausage is heated through, 2 to 3 minutes.
Remove the lid and stir in the kale. Cook until the kale has wilted, 5 to 6 minutes. Taste and adjust the seasonings as needed. Garnish with the herbs and serve straight from the skillet.
