Today's video was fun to make; a sleepy dog makes for an easier day in our house. The recipe didn't call for kiwi, but since I had it, I decided to try it (I would probably use banana next time).
Coconut Muffin Recipe: 1/2 cup coconut oil 3/4 cup all purpose flour 1/2 cup buckwheat flour 1.5 teaspoons baking powder 1 cup Greek Yogurt 1/3 cup sugar 1 egg, room temperature 1 teaspoon vanilla 3/4 cup shredded coconut (I used unsweetened) 1cup mashed kiwi
Mix flour, buckwheat flour, and baking powder together in a bowl. In a separate bowl, mix the coconut oil, greek yogurt, sugar, egg, vanilla, and kiwi. Mix the dry ingredients to the wet ingredients, and stir in half the shredded coconut. Place mixture into your cupcake tray and sprinkle the rest of the shredded coconut on top of the pre-baked mixture. Bake at 375 for 20 minutes.
