700g Lamb Mince
1/2 Large Onion finely diced
1/4 cup finely chopped Parsley
1 tbsp Baharat mixed spice
Seasoning to taste
Yoghurt Sauce:
350g Coconut yoghurt
4 baby kukes
1 tbsp dried mint
1 Lemon juiced
2 Garlic Cloves minced

Lamb Koftas with Harissa Yogurt

Ingredients
KOFTAS
465g organic minced lamb | 1 clove garlic, grated | 2tsp ground cumin,
fresh parsley, chopped | ½tsp allspice | ½tsp fennel seeds | ½tsp paprika | Pinch of salt
DRESSING
2tbsp Glenisk Greek Style Organic Luxury Natural Yogurt
1tsp harissa spice | 1 tomato blended and strained
FLATBREADS
250g self-raising flour | ½tsp salt
100ml water | 50g Glenisk Greek Style Organic Luxury Natural Yogurt
GARNISH
fresh pomegranate seeds | fresh radishes sliced | cherry tomatoes,
lettuce leaves | red onion sliced thinly | cucumber cut into thin strips,
Juice of ½ lemon | lemon wedge
Method
1. For the lamb koftas, combine the mince meat with salt, cumin, chopped parsley, minced garlic, allspice, fennel seeds and paprika. Form into small cylinders, about 5cm long and 40 grams in weight each, set aside. For the dressing, mix together the Glenisk Greek Style Organic Luxury Natural yogurt, harissa spice and the blended tomato ensuring it’s drained of excess water and without any seeds.
2. For the flatbreads, mix the flour, water, yogurt and salt into a smooth dough and rest for at least one hour covered with a cloth. Heat a griddle pan until it gets very hot. Divide the flatbreads dough into 12 rounds and flatten with a rolling pin. Cook the flatbreads on the griddle pan for 1-1½ minutes on each side and put on a plate, covered with parchment paper. Cook the koftas on the griddle pan for 5 minutes on each side until the meat is well seared. In a bowl, mix the sliced red onions with lemon juice and let flavours develop until the onions become pink, about 10 minutes. Use a potato peeler to cut the cucumber lengthwise into thin strips.
3. To serve, place the koftas on a large platter with the flatbreads folded into a fan shape, lettuce, tomatoes, pomegranate seeds, red onions, cucumber slices, sliced radishes and lemon wedges.

Ingredients:
-Half a teaspoon of salt
-1 tablespoon of lemon
-Cup of plain yogurt
-2 tablespoons of tahini/sesame seed paste
-1 pound ground lamb
-1 teaspoon of cayenne peppers or crushed red pepper
-½ finely grated onions
-1 sliced onion
-4 cloves minced garlic
-½ cup of freshly minced mint
-3 tablespoons of paprika
-1 tablespoon of ground cumin
-Naan bread
-Olive oil to grease bottom of pan
Process:
-Preheat oven to 300 degrees Fahrenheit
-Combine yogurt, tahini/peanut butter and oil, salt, lemon in bowl
-Cover bowl and place in refrigerator to chill
-In new bowl, combine lamb, grated onions, mint, paprika, cumin, and cayenne peppers/crushed red pepper; mix together with hands
-Roll meatballs about 1.5 inches thick and put on an oven pan
-Heat some olive oil in a pan
-Fry naan bread then wrap in aluminum foil and warm in oven
-In same pan, add a little more olive oil then sauté the sliced onions
-Put onions on the baking sheet used for the meatballs; place in oven
-Add more oil to pan to cover bottom; sauté meatballs until cooked
-After cooking a batch, put cooked meatballs on pan with onions and place in oven to keep warm
-Repeat process until all the meat mixture is used
-Put meatballs, onions, and yogurt sauce on top of the naan to serve
-Enjoy!
Turkish Style Kofta (meatballs) with Yogurt Sauce | Kofta bnane ka tarika
Turkish Style Kofta with Yogurt Sauce | English subtitled
Ingredients:
½ Kg Ground Beef, Chicken or Mutton
1 Medium Onion
1 tb Garlic
1 tb Ginger
2~3 Green Chillies
2 tb Coriander Leaves
½ tsp Salt
½ tsp Turmeric Powder
1 tsp Red Pepper
1 tsp Garam Masala
½ Cup Bread Crumbs or Chickpeas Powder
For Sauce:
300 ml Yogurt
1 Pinch Salt
½ tsp Garlic
For Serving:
Potato Fries
.
Method:
Chop Onion, green chilies, coriander leaves, garlic, ginger in chopper.
Now add mince, bread crumbs, dry spices & chop again.
Make meatballs of this above mixture.
Add 2~3 tbs oil in pan and fry the meatballs.
Now add 3~4 tbs water in meatballs pan, dry spices, cover the pan & put it on low flame for 3~4 minutes.
Method to make Yogurt Sauce:
Add milk, salt and garlic to the Yogurt and mix well.
Serving:
Put Potato Fries in a serving bowl, then add meatballs, yogurt sauce and the gravy of meatballs from the pan.
