It’s all about texture (and flavor!) with these delightfully light and airy puffs. The idea behind this recipe was to create a sweet peanut butter dessert inspired by cloud bread.

Keto Peanut Butter Cloud Puffs
Ingredients
1 large Raw Egg
⅛ tsp Cream Of Tartar
1 ounce Cream Cheese
2 tbsp Peanut Butter
¼ tsp Vanilla Extract
2 packages Stevia Leaf Non Caloric Sweetener (green Packet)
Instructions
1. Preheat an oven to 300 degrees and line a sheet tray with parchment paper. Separate the egg and whip the egg white with the cream of tartar until you have stiff peaks in a stand mixer.
2. Set the whipped egg white aside. In the same mixer, use a paddle attachment to combine the cream cheese and peanut butter. Whip continually until the mixture is pastey but with a light texture.
3. Next, mix in the egg yolk that was separated, the vanilla, and the stevia.
4. Use a spatula to gently fold the egg whites into the cream cheese batter in 3 separate additions. Fold gently so you maintain the air bubbles in the egg whites.
5. Scoop the batter into a piping bag or a ziploc bag with the corner cut out. Pipe approximately 14-16 puffs that are about 1 ½ inches wide.
6. Bake the puffs for 18 minutes. To test for doneness, simply shake the pan to see if the puffs come loose from the parchment paper. Cool before eating.

PEANUT BUTTER COOKIE RECIPE
(makes 12 cookies)
Ingredients:
1/2 cup natural peanut butter (125g)
1/4 cup honey or agave (60ml)
1/4 cup unsweetened applesauce (65g)
1 cup ground oats or oat flour (100g)
1.5 tbsp cornstarch or tapioca starch
1 tsp baking powder
NUTRITIONAL INFO (per cookie):
107 calories, fat 2.3g, carb 19.9g, protein 2.4g
Preparation:
In a bowl, add room temperature peanut butter, your sweetener and applesauce, beat with the mixer for 1 minute.
Add half of the oats, cornstarch and baking powder, and gently mix it in, until the dough starts to form.
Add the rest of the oats and mix until everything comes together.
If the dough is too sticky to work with, place the cookie dough in the freezer for 5 minutes.
Scoop the cookie dough (35-40 grams) and roll with your hands, you'll end up with 12 equal balls.
Flatten a bit and transfer to a lined baking tray.
Using a fork, press down each cookie to create authentic criss cross marks.
Bake cookies at 350F (180C) for 10 minutes.
Let it cool on a baking sheet for 10 minutes, then transfer to a wire rack.
When completely cool, serve and enjoy with your favorite milk.

PART 2: SET THE BAR.
I’m all for healthy eating but not at the expense of something that ain’t gonna taste good. Throughout my fitness career, I’ve had almost every type of protein bar and powder, and TBH I can tell you that I’ve never found one that I’d eat for fun.
Over the past year and and a half I’ve been working on a developing a protein bar inspired by cereal bars. I just wanted something CRUNCHY! And sweet but like, not too sweet! Supplement bars tend to have this thing where they overcompensate for the weird taste with more fake sugar and I simply CANNOT.
This was my first stab of creating a protein bar and honestly, I had a much smoother time with this development compared to the protein powders! I owe it all to the pea crisps and brown rice crisps bc they really gave my bar that Rice Krispies energy! I legit eat the Snickerdoodle bar for fun. Like not just post workout, but I legit just choose it over chips during that 3pm slump. Like WHAT IS THAT!? And I love chips!!!
Ok but taste aside the box itself deserves its own paragraph bc seriously. It’s a beaut. You see the stripes on the top of the box? Does it remind you of something? Maybe the awning of a sweet little bakery in a quaint neighborhood? It took a long time to get the packaging down. Every draft just felt so blah. So regular. Then I thought about what feeling or memory I wanted my packaging to evoke, and it struck me. My box needed to be a mini bakery. My box needed to emit food vibes! When I finally saw the sample of the gold awning on top of my little box, my heart felt complete.
So there you have it! My first ever protein bars! I can’t even believe it. Like the powders, they are plant based and gluten free! Right now they come in 2 flavors:
Snickerdoodle — my fave
Chocolate Peanut Butter — Sam approved
They’re available at Target in store and online! I hope you get to try it! Please tell me what you think. I’m always so nervous with food launches bc we all have such different taste buds! But I also wouldn’t ever release anything I don’t stand a million % behind, so YOU BETTER LOVE IT!!!
