How To make Lori's New York Cheesecake
CRUST:
1 3/4 c Graham cracker crumbs
1/2 c Butter; melted
1/3 c Sugar
3/8 ts Cinnamon
FILLING:
24 oz Cream cheese; softened
1 c Sugar
5 lg Eggs; XtrA large; seperated
1 c Sour cream
1 1/2 tb Lemon juice
1 1/2 ts Vanilla extract
CRUST: Mix the ingredients together and press into pan. FILLING: Beat cream cheese with electric mixer for 20 to 30 minutes, until creamy and soft. Add 1 cup sugar, slowly. Add egg yolks one at a time to mixture. Then add sour cream, lemon juice and vanilla until smooth. Beat egg whites in separate bowl until soft and frothy, but not firm. Then fold egg white mixture into batter and pour entire mixture into 9 inch springform pan crust. Bake at 325 degrees for one hour, then turn off oven and leave cheesecake in oven for 1 hour. 5 Tablespoons Butter. Melted.
3 Tablespoons Swerve.
1 Teaspoon Cinnamon.
Cheesecake Filling.
3 8oz. Bricks Of Cream Cheese. Softened.
34 Cup Sour Cream.
1 14 Cup Swerve. (I used Granulated)
3 Large Eggs.
1 Tablespoon Lemon Juice.
1 Teaspoon Vanilla.
Instructions.
Preheat Oven To 350°. In A Medium Bowl Mix Together
2 Cups Almond Four.
5 Tablespoons Butter. Melted.
3 Tablespoons Swerve.
1 Teaspoon Cinnamon.
Spray A Glass Pie Dish With Non Stick Spray. Pour In The Crumbly Dough Mixture And Press Down Into The Pie Dish. Bake @ 350° For 12 Minutes.
Let Cool For 10 Minutes.
In A Medium Bowl Add
3 8oz. Bricks Of Cream Cheese. Softened.
34 Cup Sour Cream.
1 14 Cup Swerve. Beat Until Smooth.
Then Beat In Eggs 1 At A Time.
Add 1 Tablespoon Lemon Juice And 1 Teaspoon Vanilla.
Beat Until Well Combined.
Take Your Pie Crust And Pour Cheesecake Mixture On Top. Smooth The Top With A Spatula. Bake @ 350° For 50 Minutes. Until Set But Jiggly.
Let Come To Room Temperature Before Refrigerating For At least 3 Hours.
