How To make Manitoba Wild Rice
1 c Wild rice
4 c Water
1 t Salt
6 ea Slices bacon
2 ea Onions, chopped
1 ea Sweet green pepper chopped
3 ea Stalks celery, chopped
1 1/2 c Sliced mushrooms
2 T Butter
1/4 c Beef stock or water
1 x Salt and pepper to taste
Rinse rice in colander with cold running water. In large saucepan, bring water and salt to boil; add rice; reduce heat to medium low and simmer, covered 30 minutes. Drain. Meanwhile, in skillet, over medium high heat, fry bacon 3 to 5 minutes or until crisp. Transfer bacon to paper towel; pat dry and chop. Drain all but 1 tablespoon bacon drippings from skillet; add onions and cook, stirring 3 to 5 minutes or until tender. Add green pepper, celery and mushrooms; cook, stirring 3 minutes. Transfer vegetable mixture to 8 cup casserole. Stir in butter, beef stock and rice. Bake covered, 15 to 20 minutes in 350 F degree oven until rice is tender. Season to taste with salt and pepper..

Manoomin, meaning the good berry, is a type of wild rice that has been harvested by the Ojibwe people in the Great Lakes region of North America for centuries. At $24 per pound, manoomin costs 15 times as much as white rice.
For the Ojibwe people, harvesting this rice means much more than money. It's a way to connect with their ancestors and pass on their traditions to future generations. But as the rest of the world discovers this ancient grain, the tribe fears that it will lose its importance and that its natural ecosystem will be exploited.

How to cook wild rice
Wild rice isn’t actually a type of rice at all, but is in fact a grass seed from the US. However, it is often mixed into bags of long-grain rice to add texture, colour and flavour. It is very chewy, contains lots of protein and fibre and tastes sweet, and is fantastic in all sorts of dishes. Soaking the rice in boiling water the day before you plan to serve it drastically reduces the cooking time.
