How To make Mediterraneo's Grilled Vegetable Sandwich
***HUMMUS-TAHINI SPREAD*** 16 oz garbanzos
2 tablespoons tahini -- (sesame paste)
1 tablespoon pure olive oil
1 teaspoon fresh pressed garlic
OR prepared garlic paste 3 tablespoons fresh lemon juice
salt and pepper to taste ***SHALLOT-MUSTARD VINAIGRETTE*** 1/2 cup champagne vinegar
1 tablespoon dijon mustard
1 cup extra virgin olive oil
1 1/2 cups pure olive oil
2 tablespoons finely chopped shallots
salt and pepper to taste ***VEGGIES*** 1 large red bell pepper
1 large yellow bell pepper
2 medium zucchini
1 medium yellow squash
1 head fennel
3 portobello mushrooms
1/4 cup pure olive oil
2 tablespoons fresh thyme
2 tablespoons chopped fresh rosemary
salt and pepper to taste 12 slices walnut bread or bread of choice -- 6 slices if large
alfalfa sprouts
For the Hummus-Tahini Spread 1. Drain garbanzos, reserving liquid. 2. Blend first 5 ingredients in food processor or blender, adding enough liquid to mix. 3. Season to taste. For the Vinaigrette: 1. Mix vinegar and mustard in a stainless steel bowl. 2. Add olive oil in a steady stream, beating with wire whisk until well blended . 3. Add shallots and season to taste. For the Sandwich: 1. Start heating grill. Cut peppers into eighths, removing seeds and stems. 2. Cut zucchini, squash, & fennel lengthwise into slices 1/4 inch thick & 2 inc hes wide. 3. Remove stems from portobello mushrooms. 4. Place with vegetables in bowl and lightly coat with olive oil; add thyme and rosemary. 5. Season to taste with salt and pepper. 6. Lightly brush bread with olive oil. Grill bread until toasted on each side. 7. Grill vegetables 4 to 5 minutes on each side until browned and crisp-tender. Keep warm. To assemble sandwiches: 1. Spread hummus on bread, top with vegetables, and drizzle vinaigrette on vege tables. 2. Garnish with alfalfa sprouts and serve with your favorite potato salad.
Makes 6 large or 12 small open-faced sandwiches.

Ingredients:
Makes 3 sandwiches
6 whole grain bread slices
9 black olives
6 cherry tomatoes (I’ve used italian Pachino Tomato)
1 mozzarella cheese (I‘ve used italian “mozzarella di bufala campana”)
6 fresh basil leaves
1 clove of garlic
Extra Virgin Olive Oil
Salt
Directions:
Heat a nonstick pan over high heat for few minutes.
Meanwhile chop the mozzarella cheese in little chuncks, place them between two paper towels to absorb the mozzarella water excess.
Halve the tomatoes, place them in a little bowl and season with some extra virgin olive oil. Chop the garlic, add it to the tomatoes and combine.
Grill both sides of the tomatoes in the hot pan for about 1 or 2 minutes, then place the tomatoes in the little bowl and salt them. Don’t turn off the heat: you will use the hot nonstick pan to grill the sandwiches.
Slice the whole grain bread.
Prepare the sandwich: on the top of a bread slice, place some mozzarella cheese, 4 halves roasted tomatoes, 6 black olives halves, 2 or 3 big basil leaves and some extra mozzarella. Top with the other side of bread and press it using your hands.
Place the sandwiches on the hot nonstick pan and grill over medium heat until the bottom is golden brown and the cheese start to melted (for about 4-5 minutes). Flip and grill the other side until crispy golden brown (for about 4 minutes).
Serve immediately.

A sumptuous and colorful sandwich for the health conscious people!!!!!! A complete meal in itself with a purple cabbage salad and a balsamic vinaigrette dressing which will tantalize your taste buds.
Makes about 4 Sandwiches
8 slices 21 grainWhole wheat bread
8 pieces Leaf lettuce
1 big tomato nicely sliced in rounds
3 tbsp thinly sliced purple cabbage
3 tbsp finely chopped leaf lettuce
2 tbsp finely diced Persian Cucumbers
2 tbsp thinly sliced black olives
1 tbsp finely chopped celery
3/4 cup Red bell pepper hummus
Dressing for the salad
Juice of 1 lemon
1 tbsp olive oil
2 tsp balsamic vinegar
1 tsp crushed black pepper
In a big bowl mix all the chopped vegetables for a salad. Pour the dressing as required over the salad, add salt if required and keep aside.
To make one sandwich take 2 slices of the 21 grain bread. Spoon hummus on both the slices and spread evenly. Put a leaf lettuce on one slice. Place 2 pieces sliced tomatoes. Put the cabbage salad on the tomatoes. Place another leaf lettuce and top it with another slice of bread to make the healthy Mediterranean Sandwich!!!!

????-Friendly RECIPE: Mediterranean Style Vegetable Sandwich with Marinated Green Beans
✅Ingredients:
2 8 Inch Italian Bread
1 Zucchini, grilled
1 Red Onion, grilled
1 Small Eggplant, grilled
1 Red Pepper, grilled
½ cup Chopped Black Olives with Capers
½ lb Blanched, Grilled, Green Beans marinated in red wine vinegar and olive oil
3 tbsp Basil Pesto
2 cups Dressed Arugula Leaves
2 Sliced Hard-Cooked Egg
✅Method of Preparation:
Split Bread, dress with Olive oil and Pesto on both sides. Arrange Seasoned Grilled Vegetables and Eggs. Top with Olives and Capers Wrap Sandwiches with Plastic Wrap and allow to chill for one to two hours. Unwrap, slice in half and serve.
