How To make Meringue Chocolate Chip Cookies
2 Egg whites
1/8 ts Cream of tarter
1/8 ts Salt
1 ts Vanilla
3/4 c Superfine sugar
1/2 c Chocolate chips
1/4 c Nuts; optional
Preheat oven 300 degrees. Beat egg whites, cream of tarter and salt together until soft peaks form. Add vanilla, then add sugar gradually, beating until stiff. Fold in choc. and nuts. Drop by teaspoon fulls 2 inches apart on ungreased brown paper layed on cookie sheet. Bake until dry approx. 25 minutes. Let cool slightly before removing from brown paper. Set on rack to cool before storing in airtight container. Freezes well. -----

This recipe for chewy chocolate chocolate chip meringue cookies gives you both, and it's super easy to make!
Bonus: it's naturally a gluten-free recipe!
Equipment:
Electric hand or stand mixer
Spatula
Microwave-safe bowl
Large mixing bowl
Cookie/baking sheets
Silicone mat or parchment paper
Ingredients:
2 large egg whites
1/4 c sugar
1/8 tsp vinegar (or lemonjuice or cream of tartar)
1/2 tsp vanilla extract
pinch of salt
6 oz (170 g) semisweet chocolate
1/2 c chocolate chips (milk chocolate or semi-sweet)
Recipe:
Preheat oven to 350 degrees F (177 C)
Line one large baking sheet or two baking sheets with parchment paper or silicone baking mat
Break chocolate into small pieces and microwave in 20-second intervals until melted
In the large mixing bowl, beat egg whites, lemon juice, vanilla, pinch of salt until soft peaks
Gradually add sugar and beat until stiff peaks
Add melted chocolate and chocolate chips into egg white mixture
Gently fold just until combined, do not over mix
Spoon batter onto prepared baking sheet(s)
Bake for 8-10 minutes, or until cookies look dry on the outside but still soft on the inside when you press down on them
Allow to cool for a few minutes on the baking sheets before placing on a wire cooling rack to finish cooling
Store in an airtight container

In this episode of In the Kitchen with Matt, I will show you how to make Meringue cookies. This easy meringue cookie recipe only requires 4 ingredients! Technically you can even reduce it down to 2 ingredients if you really wanted to. Meringue cookies are awesome! The taste kind of reminds me of the little marshmallows in the cereal, Lucky Charms. They look so cool and keep their shape really well, you can do all kinds of different shapes. If I can do it, you can do it. Let's get baking!

Ingredients:
2 large eggs (only need the egg whites)
1/4 tsp. cream of tartar (this optional ingredient helps stabilize the egg whites) (1g)
1/2 cup superfine white sugar/caster sugar (115g)
1/8 tsp. vanilla extract

Bowls (ideally glass or metal) plastic bowls don't work as well
Parchment paper
Baking sheet pan or cookie sheet
Spoon
Piping bag or plastic bag with any tip you want (optional):

Chocolate Chocolate Chips Meringue Cookies
These meringue cookies may not attract you in appearance but taste-wise, they are sure to make you feel happy!
This recipe is adapted from: Meringue by Linda Jackson, Jennifer Evans Gardner; chocolate chip clouds recipe.
1 egg whites (33 grams)
50 grams caster sugar
4 grams cocoa powder unsweetened
50 grams chocolate chips
Dash of vanilla extract
Pinch of salt
In a clean dry stainless steel bowl, whisk the egg whites till foamy and white on low speed. Add in the caster sugar by scattering it bit by bit while whisking till soft peaks form. Add in the cocoa powder and pinch of salt and continue to whisk till combined and stiff peaks form, scraping the sides and bottoms to ensure even mixing.
Fold in the chocolate chips and add in the vanilla extract and continue to fold till combined. Do not over-mix.
Transfer the whole thing to a pastry bag and snip off the end.
Pipe out shapes you desire on a parchment-lined baking tray and bake in a preheated oven of 100 degree celsius for 90 minutes. Switch off the oven, switch off the power and leave the meringue cookies to crisp in the oven for 1 hour. Immediately store in air-tight container once finish.
