Pollo Asado - Chicken Tacos - Mexican Food
Pollo Asado is pretty common in my house, I make a lot of chicken tacos and burritos. So, this recipe is in rotation several times a week. Its an inexpensive meal and is very easy to make. The best part is you can do so much with it, tacos, salads, burritos, sandwiches. I mean you name it; I am sure this grilled marinated chicken you can do so much with it. Its tasty and easy to do, I hope you enjoy it!

Pollo Asado recipe:
3lbs of boneless chicken thighs
4 California chili pods
4 Guajillo Chili pods
1/2 onion
4 garlic cloves or 2 large cloves
1 orange
1 lime
1 tsp oregano
1/2 tsp cumin
2 tsp salt or to taste, but the marinade needs to be a little saltier, the meat doesn’t absorb all the sodium. So season slightly heavy.
2/3 cup white vinegar

Hickory Smoked Barbecue Chicken Made on the Grill | I Heart Recipes
Hey fam! Grilling season is upon us, so I wanted to share my super easy, super tasty Hickory Smoked Barbecue Chicken recipe.
Using my homemade rub, some store-bought sauce and slow cooking over indirect heat, this chicken is fall-off-the-bone tender, tangy, with just the right amount of smoky flavor. It’s sure to become a regular in your grilling rotation!
Generously season chicken legs and thighs with the homemade barbecue rub. Drizzle with extra virgin olive oil and apple cider vinegar. Make sure the chicken is nicely coated. Refrigerate for a minimum of four hours or overnight. While the chicken is marinating, it’s time to fire up that grill! Get the charcoal nice and hot and add the hickory wood chips right on top (be sure the wood chips have been soaking for about an hour beforehand). With the charcoal on one side of the grill, place the chicken on the other side of the grill to cook over indirect heat. This prevents the chicken from burning and lets us grill nice and slow. Every 20 minutes or so, dab on some sauce and turn the chicken until the chicken is cooked throughout and the sauce is nice and sticky. That’s it y’all! Enjoy!

1:00 - Coat all surfaces of the chicken.
1:06 - Cover and refrigerate.
1:15 - Soak the wood chips.
1:30 - Place wood chips on the heated charcoal.
1:34 - Place the chicken on the grill.
1:45 - Flip the chicken.
1:58 - Dab barbecue sauce on the chicken.
2:15 - Continue to flip and baste the chicken.
2:25 - Remove from the grill when cooked through.

Fajita Michelada Marinade – the PERFECT RECIPE for your next Carne Asada

MICHELADA MARINADE RECIPE:
½ c OJ
½ c Tomato Juice
½ c Michelada Mix by Don Chelada
3 tbsp American Pitmaster company WOW!
1 TBS APC OG or 1 tbs of course kosher salt
1 tsp Cumin
½ tsp Cayenne
1 tsp granulated garlic
and 1 tsp Don Chelada Chile Limon Beer Salt
Whisk, then add in 12oz of beer, one small diced shallot, the juice of three small limes and the juice of one orange. Whisk once more then add 1c of Oil and mix thoroughly.
This marinade makes enough for two pounds of meat and we’re using flap meat – aka sirloin fajita!
Cover the meat thoroughly and allow it ti marinate for at least one hour 3-4 is recommended and overnight is even BETTER!
Drop your meat right on to a raging hot fire and flip, flip flippity-flip to keep the moisture inside the meat while developing that delicious char. I like to cook to a nice, medium doneness so about 135-140 degrees internal.
Oh yeah, don’t forget to sip, sip sippity-sip your michelada in between flips!

Dry rub
1 TBSP whole (small), black peppercorns
2 TBSP dry, rosemary
1 TBSP dry, thyme
