Although, we will never know the exact recipe; what we do know is, that it's marinated in citrus, garlic, and spices. Then, cooked over open fire. That Mexican Meat Market YELLOW MARINADE | POLLO ASADO
Today I am making my version of that yellow marinated chicken you get from the Mexican meat markets. The use of saffron sazon gives it that vibrant yellow color. This marinade can also be used with beef and pork. This is pollo asado my way.

*Sub the SAZON for 1 tsp turmeric, 1/2 tsp ground cumin and add 1/4 tsp more salt to recipe

8 guajillo peppers
1/2 white onion
2 garlic cloves
1/2 tablespoon mexican oregano
3 tablespoons chicken bouillion
clean water

Bake in oven covered in foil at 400 degrees for 1 hour or until done

Ingredients
2 chicken breast
7 guajillo Chiles
1 1/2 cups water
1 Jalapeño
1 1/2 onions
3 garlic cloves
1/2 bunch cilantro
1 Tbsp butter
1 Tbsp chicken bouillon (adjust to taste)
1 /2 cup heavy whipping cream
1 1/2 cups Melty cheese
1 Tbsp Olive oil
1/2 Tbsp Mexican oregano
1 tsp black pepper
1 tsp salt
1 tsp smoked paprika
1 tsp ground cumin
Optional for spice 1 serrano or Jalapeño (Extra spicy use 3 Serranos : )
Serve with white rice, salad, french fries, and corn tortillas

Pollo asado is one of my all time favorite foods to eat. As a matter of fact I don’t know ANYONE who doesn’t love a perfectly cooked pollo asado. And in this video we’re gonna show you how most restaurants cook it and my favorite way to cook it in the backyard. We’re gonna spatchcock two birds – one with and one without the backbone and we’re also going to split one bird in half, which is the traditional Texas style pollo asado.
Now here’s a pro tip – the secret to perfect cooking is fire control, especially in open fire cooking. And the second pro tip – always use a meat thermometer for perfect, juicy chicken. Don’t listen to the keyboard haters that say they don’t need a meat thermometer for perfect cooking, the reason they’re typing is because they’re still chewing their overcooked dried out chicken! As long as you have a good recipe, good cooking technique and fire, your family and friends will love your barbecue. Now let’s get fired up and grill some pollo asado.

This caldo has been in my family for generations and today I’m gonna show you step-by-step how to make it right in your own kitchen. It is amazing, delicious and warms you from the inside out.
Sure it’s traditional to eat when it is cold outside or when your feeling sick - but honestly we eat this all year round because it is one of our favorites.
I’m talking about CALDO DE POLLO!
Now different people use different veggies, different ingredients and different techniques, but I’m gonna show you my family recipe that was taught to me by my mom, which she learned from her mom too.
Here is a pro-tip: we like to use LEG QUARTERS because they have a little more fat, a little more flavor and are more forgiving if you happen to overcook it. You can use the white meat but you really need to be sure not to overcook it and dry it out.
And everyone knows Caldo de Pollo goes best with a delicious cup of Mexican Rice. Be sure to check out my recipe on how my mom makes that one, too.
Mexican Rice Recipe:
Here are the ingredients for the Caldo de Pollo:
– Leg quarters
– Corn on the cob
– 1 Zucchini
– 2 Carrots
– 1 Celery Stalk
– 1 Onion
– 3 Small Papas
– 1 Jalapeño
– 1/4 Cabbage
– 3 Garlic Cloves
– 2 tsp Comino
– 1 tbsp APC OG
