How To make Mexican Chicken (Pollo Mexicano)
1 ts Chilli powder
2 tb Soft brown sugar
2 tb Worcestershire sauce
150 ml Chicken stock
4 Skinless chicken breasts
1 ts Celery salt
2 tb Red wine vinegar
3 tb Tomato ketchup
3 Drops tabasco sauce
150 ml Natural yoghurt
Mix the chilli powder with the celery salt, brown sugar, red wine vinegar, worcestershire sauce, tomato ketchup, chicken stock and tabasco sauce. Deeply score the chicken and arrange in a flameproof dish. Pour over the chilli mixture, heat the grill to high and cook the chicken for 5 minutes. Reduce the heat and cook for 10 minutes on each side. Baste the chicken thoroughly with the chilli sauce and grill for a further 10 minutes or until the meat is tender and the juices run clear. Transfer the chicken to a warmed serving dish and spoon over any sauce from the grill pan. Top each portion with a generous dollop of natural yoghurt. Garnish with coriander or parsley sprigs and serve with a salad. Calories: 240 per serving

This is a super simple recipe and I will show you how I make it, step by step. CALDO DE POLLO INGREDIENTS:
► 3 minced garlic cloves
► 1/2 small white onion
► 1 Anaheim pepper
► 1 1/2 lb chicken thigh
► 1 cup rice
► 3 roma tomatoes
► 8 cups boiling water
► 1 1/2 tbsp chicken bouillon
► 2 corns on the cob
► 2 carrots
► 2 potatoes
► 2 calabacitas
► Bunch of cilantro

Salt I used 3 tbsp
1 bunch cilantro
1 small red bell pepper
Fresh oregano
4 Celery sticks

1 tsp rosemary

2 1/2 lbs chicken drumsticks
3 1/2 to 3 3/4 quarts water
2 dried bay leaves
1 small onion
6 to 7 cloves garlic
small head of cabbage (chopped)
2 medium potatoes (chopped in large chunks)
1 large Mexican squash (chopped in large chunks)
1 chayote squash
2 medium carrots
1 celery stick
2 green onions
bunch of fresh cilantro (I used parsley)
1/3 cup tomato puree (or tomato sauce)
1 Tbsp chicken bouillon powder
salt and pepper to taste

Here is a delicious recipe for Caldo de pollo or Mexican style chicken soup. It's perfect for a cold day or when you are sick. Add Mexican rice and a squeeze of lime tho make it even better. Enjoy!
EASY MEXICAN RICE RECIPE
*The RED POT I used is a 6.9 quart caldero pot by IMUSA brand.
INGREDIENTS
2 to 2 1/2 lbs bone in chicken pieces (I removed the skin)
2 1/2 liters water
1 large carrot (116 g)
3 medium potatoes (360 g)
1 chayote (244 g)
1 celery stick (53 g)
1 medium yellow onion (171 g)
5 cloves garlic (15 g)
5 stems of fresh cilantro (optional)
1/2 lb to 1 lb fresh cabbage
2 ears of corn (383 g)
2 medium Mexican squash or zucchini (400 g)
2 1/2 tbsp Chicken bouillon powder (27 g)
black pepper to taste
