How To make Michael Jackson's Sweet Potato Pie
3 Eggs
1/2 c White sugar
1/4 c Butter; melted
1/2 ts Salt
1/3 c Milk (about)
1 ts Vanilla extract
1 ts Ground cinnamon
1 ts Ground nutmeg
2 1/2 c Sweet potatoes (fresh or
- canned) (heaping cups) 2 tb Fresh lemon or orange juice
1 9-inch pie shell; unbaked
1/2 c Pecan halves, optional
Beat eggs and sugar. Add melted butter, salt, milk, vanilla, and spice. Blend egg mixture with mashed sweet potatoes and lemon or orange juice. Pour into unbaked pie shell or greased 1 1/2 quart baking dish. Garnish with pecan halves if desired. Bake in preheated 400-degree oven 10 minutes. Reduce oven temperature to 375 degrees; bake 40 minutes longer or until golden. Serves 6 to 8. Formatted by Mary Wilson, BWVB02B. -----

Soul food desserts have a long southern tradition of comfort and easy living. Something smooth, something creamy , something sweet describes the perfect way to top off a meal. No, it's not always the best way to end a meal if you're counting calories. But whatever price you have to pay in terms of exercise or a starvation diet next week is worth it in most cases. Why? Because eating a creaming and rich banana pudding, a piping hot deep-dish southern peach cobbler or a tasty southern sweet potato pie is always good for the soul.
Desserts in general is experiencing a surge in popularity lately. Donut shops, pie boutiques and ice cream parlors continue to flourish up despite the economic downturn of late. More people are treating themselves to sweets - even if their current financial outlook is not so sweet.
In tough economic times we all need a little break from the hassles, the stress and the mess of this recession. The unstable feeling many people are experiencing is undeniable. But the one feeling of comfort many people can get without having to get someone's permission is a delectable southern dessert. No, it won't solve your problems, but it will help you cope with them better.
In fact, I've known many soul food desserts that helped people temporarily forget their problems all together. Experiencing these many benefits is good for the soul. When something small enough to fit into a saucer or bowl can make you happy, more comfortable and content, that's the description of soul food desserts.
