How To make Mint Molasses Cookies
2 c Flour
=(sift before measuring) 1/4 ts Salt
2 ts Baking soda
1 ts Ginger
1 ts Cinnamon
1/2 ts Ground cloves
3/4 c Shortening
1 c Brown sugar; firmly packed
1/4 ts Mint extract
1 Egg
1/4 c Molasses
1/4 c Granulated sugar
Sift flour again with the salt, soda and spices. Thoroughly cream together the shortening, brown sugar and mint extract. Beat in the egg until light and fluffy. Add molasses; mix well. Mix in dry ingredients until well blended. Chill at least 2 hours. Shape into balls the size of walnuts. Roll in granulated sugar, and place 2" apart on a greased cookie sheet. Bake in a 350` oven until crisp and
browned, about 15 minutes. Makes about 4 dozen cookies. Wis/Gramma -----

Coated in peppermint white chocolate, these soft chocolate sugar cookies are a beautifully festive and totally irresistible cookie. Like traditional peppermint bark but in delicious cookie form.

Molasses Cookies
2 1/4 cup AP flour
1 tsp baking soda
1 1/2 tsp ground ginger
1 1/2 tsp ground cinnamon
1/2 tsp ground cloves
1/4 tsp ground allspice
1/3 cup sugar
1/3 cup brown sugar
1 1/2 sticks softened butter
1 egg yolk
1 tsp vanilla
1/2 cup molasses
1/3 cup of white sugar for coating cookies.
Preheat oven to 350°
mix together the first 6 ingredients
and set aside.
In stand mixer mix butter and both sugars until fluffy
add in egg yolk and continue to mix. add vanilla and molasses and mix.
Turn down to low and add in flour mixture.
Line cookie sheet with parchment paper and scoop out batter by 1 tablespoon. place in sugar and coat.
Bake in preheated oven for 11 minutes.
