How To make Minted Lamb Patties
12 ounces ground lamb
1 clove garlic
pressed
1 green onion :
finely chopped
2 tablespoons minced fresh mint
salt and pepper -- to taste 3 tablespoons Major Grey's Or Other Chutney
PREHEAT brOILER.
In a small bowl mix together the lamb, garlic, green onion and mint. Season with salt & pepper to taste and form into two 1" thick patties. Broil until brown, about 4 minutes. Spread 1 1/2 tablespoons chutney over each lamb patty; continue broiling until chutney bubbles slightly, 1 to 2 minutes longer.

Minty Lamb Burgers
Serves 6
Prep: 30 mins
Cook: 15 mins
Ingredients:
Frylight Cooking Spray
50g fresh white breadcrumbs
1 garlic clove, crushed
1 small bunch fresh coriander, chopped
1½ tsp mint sauce
1 large red onion, roughly chopped
500g lean lamb mince
6 lettuce leaves, to serve
6 brioche buns, to serve
3 gherkins, thinly sliced, to serve
salt and freshly ground black pepper
3 tbsp Tzatziki or mint yoghurt
Method
1. Preheat oven to 200 degrees.
2. Put the mince into a bowl. Add breadcrumbs, garlic, coriander, mint sauce, onion and salt and black pepper. Mix with your hands until everything is combined. Using wet hands, shape into 6 burgers. Cover and chill in the fridge until needed.
3. To cook the burgers, spray a frying pan with Frylight and place over a medium heat. Wait for the Frylight to go clear. Fry the burgers for about 3–4 minutes on each side or until browned. Place pan into a preheated oven for 12-15 minutes until cooked through.
4. Serve in a brioche bun with lettuce, gherkins and some tzatziki or mint yoghurt.

Ingredients
- Lamb patty (recipe below)
- 1 tbsp minted greek yogurt
- Small handful rocket
- Pickled red onions
- 1/3 Lebanese cucumber, cut thin and salted
- 1 burger bun
Method
1. Toast the bun, then spread yoghurt on both sides.
2. Next and your rocket followed by the patty, top with cucumber and pickled onion.
Lamb patties (recipe for 3 small or 2 large)
- 500g Lamb mince
- 1 tbsp ground cumin
- 1 tbsp dried oregano
- 1 tsp salt
- 6 grinds of the pepper mill
Method
1. Mix everything (not too much).
2. Shape into burgers.
3. Oil the outside and grill over a hot grill.
Ingredients pickled red onion
- 1 red onion, sliced lengthways thin
- 200ml water
- 200ml apple cider vinegar
- 1 tbsp sugar
- 1 tbsp salt
- 1 cinnamon stick
- 2 star anise
Method
1. Place everything apart from the onion into a pot and bring it to a boil.
2. Pour over the sliced onions and as soon as it's cold it's good to go.
3. These will keep in the fridge longer than they will last (well at least at my house).

Spicy lamb burger with tzatziki (ish) sauce | burger recipes
You know when you just crave a burger, and you just have to have it, and nothing else will do? this was me the other day. I knew I wanted a burger, but I wanted something a bit different. Not like banana and mustard kind of different, more spicy lamb burger with a tzatziki-ish sauce kind of different, and this is the baby I produced.
The thing with lamb, is it's nice and fatty. This lends itself well to a burger where you want a nice meaty crust, but still juicy on the inside. You need to get good lamb mince for this OK. no going the frozen aisle and buying the cheap rubbish stuff, have something else instead. You can also switch up the spices and add your own flavours. Want more heat? then chuck in some fresh jalepenos. Want cheese? then add it, it's your burger after all. i'm just the meat messiah, guiding you on a burger pilgrimage.
To make my spicy lamb burgers with tzatziki (ish) sauce you will need:
►450g of lamb mince
►About 1/4 tsp of cayenne (more if you want it hotter)
►1/2 tsp of cumin
►1/2 tsp of smoked paprika
►Salt & pepper
Sauce
►150g of greek yoghurt
►About 2 tbsp of chopped cucumber
►About 8 mint leaves
►2 tsp of honey
►About 1 tbsp of lemon juice
►Salt & pepper
Burger buns and of course the toppings of your choice. I used lettuce, piquante peppers and some sliced red onion.
