The burgers, shaped and uncooked, freeze brilliantly, so make a double batch and layer some with greaseproof paper before freezing for up to 3 months.

INGREDIENTS:
●500g lamb leg steak, thinly sliced
●cup mint jelly
●juice 1 lemon
●1 garlic clove, crushed
●500g chat potatoes, par-boiled, quartered
●1 zucchini, thinly sliced lengthways
●2 tablespoons olive oil,
●plus extra, for brushing
●2 teaspoons rosemary, chopped
●4 bread rolls, split
●50g baby spinach leaves
●125g tub hummus
●Greek yoghurt, to serve
