How To make Mom's Pumpkin Cookies
3 c Pumpkin
1 c Shortening
2 c White sugar
4 c Flour
2 ts Soda
2 ts Salt
2 ts Baking powder
2 ts Vanilla
2 Eggs
2 ts Cinnamon
1 lg Bag chocolate chips
1 Jar marichino cherries
-chopped Cream together pumpkin, shortening, white sugar. Then add and mix flour, soda, salt, baking powder. Then add and mix vanilla, eggs, cinnamon. Then add and mix chocolate chips, cherries, nuts. Drop by spoonful on greased cooie sheets. 12 - 14 minutes at 375~ -----

Since everyone loved my last baking with mom video, I asked her to come back to teach another lesson! This fall baking recipe is pumpkin oatmeal cookies that are so tasty and can be altered to be more of a healthy cookie if you'd like. I hope you enjoyed baking with us!

Tasty Pumpkin Oatmeal Cookies

Yield: 48 cookies
2 cups all-purpose flour
1 +1/3 cups old-fashioned oats
1 tsp baking soda
1+ 1/2 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp allspice
1/2 tsp salt
1 cup softened butter
1 cup packed brown sugar
1 cup white sugar
1 cup pure pumpkin (canned)
1 egg
1 tsp vanilla extract
3/4 cup chocolate chips or raisins or 1/2 cup chopped apple plus
1/4 cup butterscotch chips
METHOD:
1. Preheat oven to 350 F.
2. Line cookie sheets with parchment paper.
3. Combine the flour, oats, baking soda, cinnamon, nutmeg, allspice and salt in a medium bowl.
4. In another bowl and using a wooden spoon, cream the butter , brown sugar and white sugar until light and fluffy.
5. To the bowl with butter and sugars, add the pumpkin, egg and vanilla. Mix well.
6. Add the flour mixture and mix well.
7. Stir in the chocolate chips or other additions to suit your taste.
8. Drop by rounded tablespoons or disher onto the cookie sheet.
9. Bake for 12-16 minutes or until cookies are lightly browned and set in the middle.
10. Cool on the baking sheets for 2 minutes and then remove to wire racks to finish cooling.
