I made this on the day my girlfriends were driving 4 hours to spend the weekend with me. They said it was the best quiche they'd ever had. Great served for breakfast, lunch or brunch, this tasty version is filled with spinach, cheese and mushrooms. If you want to go OTT, add some bacon. Because.

melted butter - 30 g (1 oz)
boiled potatoes - 2 pieces
canned red beans - 50 g (1.76 oz)
canned corn - 50 g (1.76 oz)
sour cream - 40 g (1.4 oz)
salt - 10 g (0.35 oz)
black pepper - 5 g (0.18 oz)
sweet paprika - 5 g (0.18 oz)
olive oil - 20 ml (0.7 fl oz)
pressed cheese - 80 g (2.82 oz)
cherry tomatoes - 4 pieces
IN THE OVEN 180°C (356 °F)/25 MIN

white wine - 100 ml (3.4 fl oz)
salt - 8 g (0.29 oz)
black pepper - 5 g (0.18 oz)

Keto Quiche - Crustless Quiche with Spinach
This easy crustless spinach quiche is cheesy and full of spinach. Make this keto friendly spinach pie for breakfast, or have as a delicious, veggie packed dinner.

INGREDIENTS:
2 Tablespoons Butter
2 Tablespoons Diced Onion
1 12 ounce Package frozen chopped spinach, thawed and squeezed of liquid
5 Large Eggs, beaten
1 1/2 Cups Heavy Cream
1 teaspoon Kosher salt
1/2 teaspoon Black Pepper
1/2 teaspoon Ground nutmeg
2 Cups Shredded Swiss cheese
INSTRUCTIONS:
Heat the butter in a small slilet over medium heat. Sauté the onion until it is translucent, about 6-8 minutes.
Pre-heat the oven to 375F. Spray a pie pan with cooking spray. In a large bowl, add in the spinach, onion, beaten egg, heavy cream, salt, pepper, nutmeg, and cheese. Stir until all combined. Pour into the pie plate.
Bake in the preheated oven for 35-40 minutes, or until the eggs are set. Cut into 6 slices and serve.
