Keto Chocolate Mint Fudge!
Ingredients:
1 cup heavy whipping cream
3 tbsp unsalted butter
1/3 cup confectioners sugar substitute (I say 1/2 in the video, but it should be 1/3!)
2 tsp vanilla extract
1/4-1/2 tsp mint extract (to taste)
1 tbsp unsweetened cocoa powder
1/2 cup keto friendly chocolate chips (I used bake believe!)
green food coloring, optional
Directions:
1. Heat the heavy cream, butter, and confectioners sugar substitute together in a saucepan over medium heat on the stove. (Use a whisk to combine.)
2. Continue to cook down the mixture until it begins to thicken and turn slightly brown. (This took about 15 minutes or so, whisking occasionally.)
3. Remove the mixture from the heat and stir in the vanilla extract.
4. Place about 1/4 of the mixture into a small bowl and set to the side.
5. To the remaining larger portion in the saucepan, add the cocoa powder and whisk to combine.
6. Let the mixture cool for about 5 minutes before adding the chocolate chips and stirring to combine.
7. Place the chocolate flavored mixture in a parchment line loaf pan and spread evenly. (Make sure there are overhangs for easy removal.)
8. To the small portion of fudge mixture, add the mint extract and green food coloring and mix to combine.
9. Pour the mint mixture on top of the chocolate mixture and spread out. (I didn't have enough to cover completely so I swirled mine with a toothpick.)
10. Place in the refrigerator for 4 hours to set.
11. Remove from the refrigerator and the pan using the parchment paper overhangs remove from the pan.
12. Cut the fudge into 12 equal pieces and enjoy!!! (Each piece should be around 2 net carbs!)

This tastes amazing and satisfies my craving for something sweet!!! It is a great St. Patrick's Day dessert or anytime really if you like mint!!! I hope you like it!!!

Ingredients for Beetel leaf / Paan fudge :
125gm Chopped White Chocolate
100 ml Condensed Milk
1/4 Cup Dried Paan (mukhwaas) ( this u well get in any super market)
1 Tbsp salted Butter
1/2 tsp Green Food Colour (Powder or Gel)
Colourful Mint Sprinkles (Mukhwaas) ( this u well get in any super market)
Method:
First heat the condensed milk in a pan on low flame. Stir it and add 1tbsp salted butter.
Keep mixing it. Now add white chocolate and mix gently .
Add dried crushed paan and color .
Once the chocolate melts and there are no chocolate chunks , mixture is smooth,
shiny, thick and starts moving like a melted dough.
Switch off the flame. Cooking more may burn it.
Pour this mixture in lined square tin. Sprinkle some dried paan &
Colourful Mint Sprinkles on the top of fudge.
Tap the tin to settle the batter.
If you want this fudge to set quick, keep it in fridge for some time.
Else, let the fudge set in room temperature for 2-3 hrs.
Demould it and cut in square pieces.

Dark chocolate nutty fudge:
Ingredients for Dark Chocolate Fudge:
125gm Chopped Dark Chocolate
100ml Condensed Milk
1/4 Cup Roasted Nuts
1 Tbsp salted Butter
Method:
First heat the condensed milk in a pan on low flame. Stir it and add 1tbsp salted butter.
Keep mixing it. Now add dark chocolate and mix gently .
Add roasted nuts. Once the chocolate melts and there are no chocolate chunks , mixture is smooth, shiny, thick and starts moving like a melted dough.
Switch off the flame. Cooking more may burn it.
Pour this mixture in lined square tin. Sprinkle some nuts on the top of fudge.
Tap the tin to settle the mixture.
If you want this fudge to set quick, keep it in fridge for some time.
Else, let the fudge set in room temperature for 2-3 hrs.
Demould it and cut in square pieces.

Vanilla cookies'n'ceam Fudge:
Ingredients for Vanilla cookies'n'ceam Fudge:
125gm Chopped White Chocolate
100ml Condensed Milk
oreo biscuits ( i have added strawberry flavour)
1/2 tsp vanilla essence
pink gel color/powder color
1 Tbsp salted Butter
Method:
In a microwave safe bowl add white chocolate , condensed milk and butter .
now microwave it for 20 seconds.
stir it well.
Once the chocolate melts and there are no chocolate chunks , add mixture is smooth
add vanilla essence , pink gel color and crushed oreos and mix them lightly so it will give marble effect.
Pour this mixture in lined square tin. Sprinkle some oreos on the top of fudge.
Tap the tin to settle the mixture.
If you want this fudge to set quick, keep it in fridge for some time.
Else, let the fudge set in room temperature for 2-3 hrs.
Demould it and cut in square pieces.

Orange Berry Fudge:
Ingredients for Orange Berry Fudge:
125gm Chopped White Chocolate
100ml Condensed Milk
1/4 cup craneberry / blueberry
1/2 tsp orange essence
orange gel color/powder color
1 Tbsp salted Butter
Method:
In a microwave safe bowl add white chocolate , condensed milk and butter .
now microwave it for 20 seconds.
take them out .stir it well.
Once the chocolate melts and there are no chocolate chunks and mixture is smooth
add orange essence and orange gel color and berries mix them well.
Pour this mixture in lined square tin. Sprinkle some berries on the top of fudge.
Tap the tin to settle the mixture.
If you want this fudge to set quick, keep it in fridge for some time.
Else, let the fudge set in room temperature for 2-3 hrs.
Demould it and cut in square pieces.

RECIPE:
Over low to medium heat, combine 3 cups of chocolate chips, 1 14oz can of sweetened condensed milk and 2-4 tablespoons of butter. I used about 2 1/2 tablespoons in mine. Stir often, being careful not to burn. Once all melted and well combined, remove from heat and stir in 1/2-1tsp of peppermint extract. Top with crushed candy canes, sprinkles or any topping of your choice. Pour and spread into 8x8 inch pan that has been lined with foil and well coated with cooking spray. Refrigerate for at least 3 hours. Once completely hardened, cut with sharp knife into small bite sized pieces. Store in refrigerator.
